Wow, you have invented the mille feuille Recipe, puff pastry, fold over, roll out, repeat 20 times. Now you have 1024 layers. All we need is a Frenchman to come up with a name for it.😂😂😂😂😂
You start with a sheet of cold butter and encase it with dough. Roll it out evenly and then turn the dough (fold it into this S shape fold, Then you rotate the dough 90 degrees and repeat the roll and fold). The key is that it must stay cold. If the butter starts to melt into the dough it won’t bake with fine layers. So many times this can involve repeatedly stopping and chilling everything multiple times. Depending on the number and type of folding you do impacts the final texture greatly. Classic croissants had 55 layers, some croissants do 81. French puff pastry had 1280, English-style had 1028. Some have gone into 2000+ but after some point “layers” stop really becoming different than just mixing.
Y'know what, this episode has inspired me to try and make some сырники again. The recipe tends to lurk in the back of my mind, but I want to remake it and quantify it, because the recipe that I was taught relies heavily on just remembering how much of an ingredient was spread into a certain bowl, and I want to be able to remake it anywhere, so I'm gonna head out and check if we have enough cottage cheese. Recipe, puff pastry, fold over, roll out, repeat 20 times. Now you have 1024 layers. All we need is a Frenchman to come up with a name for it.😂😂😂😂😂
I thought you had to put cold butter in between each layer.
You start with a sheet of cold butter and encase it with dough. Roll it out evenly and then turn the dough (fold it into this S shape fold, Then you rotate the dough 90 degrees and repeat the roll and fold).
The key is that it must stay cold. If the butter starts to melt into the dough it won’t bake with fine layers. So many times this can involve repeatedly stopping and chilling everything multiple times.
Depending on the number and type of folding you do impacts the final texture greatly. Classic croissants had 55 layers, some croissants do 81. French puff pastry had 1280, English-style had 1028. Some have gone into 2000+ but after some point “layers” stop really becoming different than just mixing.

Y'know what, this episode has inspired me to try and make some сырники again. The recipe tends to lurk in the back of my mind, but I want to remake it and quantify it, because the recipe that I was taught relies heavily on just remembering how much of an ingredient was spread into a certain bowl, and I want to be able to remake it anywhere, so I'm gonna head out and check if we have enough cottage cheese.
