  • Naples is known all over the world as the city of Maradona, pizza and Vesuvius. Under the Neapolitan sun saying good morning with a wonderful scent that fills the streets and neighborhoods is a tradition called by everyone the black gold of Naples: coffee.

    I gotta say, aside from the great content, I love the way that Neapolitan coffee maker’s hat goes up and down with the raising and lowering of his brow as he talks us through his demonstration 5:25

      The beans in the Italian bars are usually very poor quality and are normally provided free or sponsored by the manufacturer of the machine they use. That being said I enjoy their espresso. Maybe it’s the atmosphere.

    Why does the barista in Caffè Daniele use a spoon to ‘stop’ the coffee after brewing it?

    How do you make the coffee cream, I have tried multiple times but cannot suceed

    • @atlas-stories
      @atlas-stories  Рік тому

      It really depends on what you're using to make coffee. If you're interested in coffee cream, research pressurized portafilter

    • @ericpmoss
      @ericpmoss 4 місяці тому

      If you mean the sweetened foam they put in the bottom of the cup, search for recipes for “crema di caffè”. Basically, it is cream, a ristretto, and white sugar whisked until smooth.

    • @skr2345
      @skr2345 Місяць тому

      if you are not aware to make the original one, then you can try with the instant coffee + sugar + water. It makes very good coffee cream even if you use the spoon.

  • @Screwdriver1234
    @Screwdriver1234 4 місяці тому

    I own a lever machine and this explanation is actually not correct. The lever generates a standard, declining pressure profile while moving upwards thanks to the internal spring you have tensioned by pulling it down. It's physics. You can manipulate it a tiny bit, but it is not nescessary. The profile starts at 9 bar and slowly down to 0. The actual speed of extraction is manipulated by grinding the coffee finer or coarser or lowereing or increasing the dose size. The pressure profile is considered ideal because the flat 9 bar pump rofiles tend to have too much pressure towards the end of the extraction promoting a less sweet cup.
