How To Make The Perfect Chicken Yakhni Pulao

  • Ingredients:
    Yakhni Broth
    1.5 kg chicken pieces
    1-inch sliced ginger
    4 garlic cloves
    1 medium red onion
    1 ½ tsp cumin
    1 ½ tbsp coriander
    1 ½ tsp fennel seeds
    2 bay leaves
    8 cloves
    5 cardamom
    2 cinnamon sticks
    ½ tsp peppercorn
    1-star anise
    1 black cardamom
    1 tbsp salt
    6 cup water
    Rice
    ½ cup cooking oil
    2 tbsp butter
    ½ cup sliced onion
    4 cardamom
    6 cloves
    1 tsp cumin
    7-8 black peppercorn
    1 bay leaf
    1 ½ tsp ginger paste
    1 tsp garlic paste
    ¼ tsp mace
    ¼ tsp nutmeg
    ½ cup plain yogurt
    1 tsp sugar
    5-6 green chilies
    6 cup yakhni broth
    4 cup basmati rice
    1 tsp salt to taste
    1 tbsp ghee
    2 tbsp fried onions
    Instructions:
    1. Using a large pot, add chicken, ginger, garlic, onion, cumin, coriander, fennel seeds, bay leaves, cloves, black peppercorn, cinnamon sticks, cardamom, star anise, black cardamom, salt and water
    2. Cook for 10 minutes on high heat with lid on
    3. Cook for another 20 minutes on low heat with lid on
    4. Transfer the chicken pieces to a separate bowl and set aside
    5. Strain out the yakhni broth into a cup to use it for later
    6. Sauté onion in butter and cooking oil until brown
    7. Stir in cardamom, cloves, cumin, black peppercorn, bay leaf, ginger paste and garlic paste
    8. Add chicken pieces from earlier, mace, nutmeg, sugar and plain yogurt
    9. Add green chilies, reserved yakhni broth and basmati rice
    10. Salt to taste and cook until water is reduced
    11. Cook for 15-20 minutes on low heat
    12. Drizzle ghee and fried onions on top before serving
    13. Ready to Enjoy!

    Amazing... just one tip...if you darken the onions a bit more then the rice will also turn that rich brown colour you see pulaos have . Looks very very nice otherwise!!

      Partially correct....we all love cooking and eating, specifically myself. But eating more doesn't mean u will get fatter. Burn your calories everyday/alternate day by jogging or running in gym (personal/society).
      By that you can complete your lasts on food and also maintain your figure. Isn't it?.....ty

      The method of recipe is perfect, doesnt matter if rice broken, some people like overcooked rice. But you can add little less water than will be fine.

      Its becuse of the spoon he was using after the pulao just made. As he already added alot of water they became soft

    Just made it... Tasted delicious!
    I made a major mistake though..i used a pressure cooker to cook the chicken...resulting in pieces crumbling later 🤔

    Not seems a wise method to cook this.. First discard the all whole spices and again add almost all of them again.
    I think this process need some modification.

      Those whole spices have been boiled for 30 mins. Their flavour is already in the broth/yakhni rendering them useless for further use.

      I think the amount of broth to rice has to be adjusted or you will overcook the rice or undercook it.

    I tried it and the yakhni polao was amazing. Even my father in law complimented my cooking (which is very very rare)! Excellent recipe. ❤️❤️❤️
    Tips for other viewers who might wanna try this recipe:
    Make the breast pieces a bit small in size because breast pieces are generally quite dry.
    Add an extra 1/2 cup water for the broth/yakhni so that when the broth is ready you have exactly 6 cups.
    If you are using chinigura rice,wash and soak the polao rice for 30 mins and then strain the water before putting it in the pot.

    Made this & holy shiz. I finally know how my fave restaurant makes their yakhni pilau. There was so much depth to the flavors in the rice & the chicken was so tender @ flavorful too. Not gonna try another chicken yakhni pilau recipe ever again cuz this here is it.

    Very easy and tasty recipe as long as you have all the items ready on the go. You can also shorten the time by doing step 2 at the half way of chicken boiling. I have reduced one clove for each step and added the nutmeg into boiling. And also added a little powder Cumin and coriander for extra flavour in step 2.

    Growing up, this was one of my most favorite dish. I was never a big fan of really spicy food. So Yakhni Pulao, Kachi Biriyani or Korma were always my favorite

    The stock is never enough. The rice comes up dry and not soft.

      You can add some extra water while putting the rice if the stock prepared earlier isn't sufficient......wont affect the taste
