I actually think these kind of tasty videos send an important message. They spend a week trying to make mozzarella or bake chocolate croissants if it's necessary. But they never give up. And because of that they always succeed in the end. It's nice to see people really getting into something and trying to learn something new without giving up after a few failed attempts. I remember when this girl wanted to copy the giggly cheese cake. It took her forever but she did it.
Thats why I like the behind tasty and eating your feed videos on tasty. They show more than the 2 to 9 min video and show they are mot experts

A few tips if you aspire to make macarons:
1) Use the Italian method - it's more forgiving and harder to over/undermix than the French method used in this video. The Italian method only adds one extra step which is cooking a sugar syrup on the stove top and adding that to the meringue. It gives the meringue a more stable structure.
2) Likewise, use Italian or Swiss buttercream. MUCH less sweet than American and cuts down on the overall sweetness of the macaron. Consider using less sweet flavors, as well, such as a tart raspberry or lemon, or a dark chocolate ganache.
3) If you want to flavor the fillings, a good way to do it is to do a ring of buttercream with a dollop of filling in the middle, so the buttercream keeps the filling inside but you get a nice hit of flavor in the middle. I love using raspberry jam, lemon curd, and salted caramel as fillings.
4) If you let the filled macarons sit in the fridge overnight in an airtight container, they will hit maximum awesomeness in texture and flavor the next day. The filling flavors will infuse into the shells a little bit and the shells will have a nicer chew in the middle
5) Don't give up! If you have a bad batch, troubleshoot by making ONE major change and seeing how the next batch turns out! The most common mistakes are over/under mixing OR over/under baking. You may also need to fiddle with oven temperature to find what works best for you.

I'm pretty sure that the reason why macarons are dried before they bake is to ensure a crisp outside shell and a stable rise in the oven when they're baked.

Ashley Jumper you can make other flavour, there are different kind of fillings, you can make a blue one and fill it with blueberry jam or strawberry, lemon, many other flavours. You can look it up, it's pretty popular too, and it's quite easy :)

there is lactosefree milk though. it is and tastes exactly like regular milk just sweeter (because of the lactase that is added that breaks down the lactose into sugars)
