I've always felt the secret to great pizza is the sauce. When someone is willing to make the tomato sauce by hand, it drastically improves a pizza. Most commercial sauces add far too much sugar, and minimal spices. When in truth the opposite is so much better. 🍕🍅

The yeast you use, the types of cheese, how and what you cook it on and with as a heat source, the oil you use in the dough but the one thig ppl don't usually know is that the water used for the dough is what makes NYC pizza extra special. All those dead bodies and rat shit int he water makes it extra yummy.
Cheese on bottom is an upside down pie. The first and still the best I ever had was L&B Spumoni Gardens in Brooklyn. I highly recommend trying them. I think i had Johns a long time ago but can't remember, I'll have to try them again. I did get to try the one that's rated the best in the world recently and it was very tasty so maybe go and try Una Pizza Napoletana to see how that stacks up.

Just dropped into the comments to see how far I had to scroll before someone mentioned Lucali's. NY has some of the best pizza on the planet. And some of the absolute worst. Not having time to wait at Lucali's on a biz trip, I kept grabbing slices here and there. World Pie in Brooklyn is one of the better joints for a slice on the go. Protip: Avoid any place with "Vinnies" in the name. As a reference point, Domino's is about mid point on the NY scale due to the plethora of bad pizza places.

Glad I tried it, but idk I’ll ever have the patience to go again lol. Regardless, I can’t lie, still the best tasting pizza I’ve ever had. The only peoblem with this is that there is a higher risk of the dough burning, considering the full sauce cover usually prevents that too. Overall the method is not as important as the ingredients, which I guess are good

@@Neockoen NY-style pizza uses full-fat low-moisture mozzarella because it doesn't get nearly as soupy if you put a lot of cheese on it. I love mozzarella di bufala on a pizza and can get it very easily in NYC, but on something in this style with that much cheese it would flood the pizza with moisture (learned that one from experience). There's a reason they don't use a whole ton of fresh mozzarella on Neapolitan-style pizzas in Italy, at least when I had them there. I personally love both on pizza, but it depends on what I want. And you get a different flavor profile and amount of browning on the cheese compared to the fresh mozzarella, and the fermentation you get from low-moisture mozzarella just brings something different to the party that I personally enjoy.
Went to a place in Brooklyn. Pizzas came on a rack that was the size of the table, you ate under the pizza. There were 12-15 tables. And a little old italian lady wrestling pizzas out of a brick oven with a paddle you could whoop Godzilla with. Slices had to be folded twice to be picked up. I can see with my eyes that this pizza isn’t half the pizza I had that day.

Yeah if you use a charcoal oven you run the risk of the crust being burnt or not being cooked evenly but if done right can make an amazing pizza

Best pizza I ever had, and I was in the pizza biz for six years, was at Big Louie's on Sunrise Blvd in So. Florida over 30 years ago. I would drive an hour to get one, and I never had a bad one. The property owner raised the rent and the guy shut down after one year. It was a fucking crime
