I feel so bad for the chef that was crying and saying “I’ve waited 27 years to feed him apple concentrate.” I really hope he got to cook one of his own recipes for Gordon and get the credit he deserves.
As someone who cooked for 20 years I felt so bad for that chef having to serve that owners ridiculous food. When he cried it hit me hard. Chefs that care live and die with every plate.
I don't pretend to be a master chef, but I have restaurant experience. There really is a thing called "cooking with love". It's when you perfectly place every topping on a pizza or pepper on a sandwich for consistency instead of tossing a handful of crap, it's when you balance all the spices to make sure nothing is too spicy or too salty, or when you would rather remake a meal instead of serving it even slightly burnt. I remember having one especially bitchy manager, and I told him that food is more of an art than a science, and it would serve him to take some pride... Some people actually give a shit.
Anybody who actually cares about food would never work in a place like that. That's like saying, "I wish I didn't have to serve that" while working at McDonalds
It's genuinely surprising that this hotel became arguably Ramsay's most successful story on the show. Doubly amazing that Sandy still runs the place, and seems to be doing an amazing job at it.
Unfortunately Sandy sold it to a new owner; apparently he had a heart attack and just wasn't able to run the place anymore. But up until when he sold it in 2022 it was a huge success story and had been getting great reviews and Sandy was running it well.
Seeing that chef cry over the quality of his food that was served to Gordon... You can tell that he had immense respect and admiration for Gordon as a fellow chef and was just devastated that he was forced to serve him slop.
I feel so bad for him. He was crying because he was serving bad food and being humiliated in front of Gordon when none of it was his fault. I'd cry too, even if I really was a bad chef. If it was someone else making those choices, I'd feel very hurt knowing my own reputation was getting tarnished.

I know a girl who worked at a different restaurant in Vermont and the owner of it was friends with sandy and worked out a housing deal so the girl could stay at the four seasons inn while working for the other guy. I was offered the same deal. The way she described sandy, the inn, the housing, and the restaurant made me completely turn away from it entirely and I’m genuinely shocked to know that the inn is still open. Fun fact: Layla passed away but had about four other puppies before she did. All of them were named after guns: smith, Wesson, Remington, and one more (I believe ruger but don’t quote me)

Just in case you are wondering: The owner took to heart everything Gordon taught him and improved himself and the hotel. Nowadays the hotel (Renamed to Layla's Riverside Lodge) has a 4.9 in google reviews and appears to be an excellent place to visit
This episode was one of the best of the show. Sandy was really someone who needed help and got it. The hotel is still open and get a lot of positive feedbacks.

I was offered the same deal.
The way she described sandy, the inn, the housing, and the restaurant made me completely turn away from it entirely and I’m genuinely shocked to know that the inn is still open.
