    When I make my meatloaf I mix a can of tomato soup and then fill the soup can with milk and swirl a spoon in it to get the rest of the soup out, add salt and pepper mix it with a whisk then pour it over the meatloaf, bake covered @ 350 degrees for an hour, remove the lid and cook for 20 or 30 minutes more until the sauce thickens a bit and serve it over mashed potato. Saw the recipe on a cooking show many years ago and my family loves it. I also like to add vinegar, bacon grease, some sugar, salt and pepper and diced onion to my canned green beans then cook them until the liquid is almost gone. Dehydrated onion works just as well as fresh onion does.

    I just Love watching you, Mel! I think I took you once, that I lived in Maryville for 6 years while I went to Maryville College and my husband did graduate work at UT, so I absolutely adore your accent! Then, early ‘80’s we moved to Jackson, where we lived for 10 years and had our 4th child, a Son, ( who is now 39!), but listening to you makes me feel like I’m “ Coming Home again “! Thanks for your easy and delicious recipes, which at My age, (73), I truly appreciate! I’m definitely making that Mexican dish tonight with the cornbread. Thank You! Thank You! From this old Lady!     My husband loves meatloaf but if I don't get the spices just right in it he thinks it tastes like a big burger, so I make sure to double my spices for my meatloaf just to make him happy!     I love using my muffin tins to make individual size meat loaf. I usually freeze them that way and then pop them out place then in a gallon ziplock bag and when I want to cook some up I’ll pop them back in my muffin tin’s depending on how many we will eat for that night. I cover them with tomato sauce and bake. Takes about 20 minutes and it’s done! Yum!😊❤

    Please don't ever feel like you have to qualify yourself or the way you pronounce your words. You are Southern polite And that's currently In short supply. If they misunderstand or feel insulted by anything you say that's their failing not yours. We "smart folk" Love and adore you just how you are. People like you honestly make me feel shame for every time I ever made a rude rude Southerner Southerner/hillbilly joke. I'm half Cuban and I recently had a fellow spic Told me that "Cubans are the rednecks of the Latin world". Normally those would be fighting words but I told him thank you.     I have made those little meatloaves a couple of times. I liked them, but my husband absolutely loved them! He makes little meatloaf sandwiches with the leftovers.

    Hi Mel, I just wanted to tell you that you don't need to put oil in cooking pasta. It creates a slippery surface so the pasta sauce won't stick to noodles. I'm just trying to let you know that.

    I love these recipes. They remind me of my early married days cooking and try to figure out what to cook for my kids and man. I have learned to add a cup to a quart of water to my hamburger meat when cooking it. I can't have the grease cause of my gallbladder. It gives me awful fits if I have a lot of grease. I just season the meat and get it broken up and add the water and it brings the grease up to the top and I pour it off.

If a recipe even just has the appearance of looking hard, I would just pass it over, but sometimes just seeing someone else put something together really shows that it's not as hard or time-consuming as it looks.     I’m going to have to try these. I make my canned green beans by adding a bouillon cube to each 1-2 cans and cook them in a pressure cooker about 7 min. They aren’t greasy but taste great. I’ll have to try some brown sugar. I shape my meatloaf the same, add some of my tomato mixture in the meat and put sauce on last 7 minutes. I also add brown sugar to mine.

    I appreciate learning cooking tips like using the cream cheese dip in the mash potatoes. And I MAY try the green bean recipe only because Patrick likes it. (I don’t eat canned green beans. Ask my first day care provider from 54 years ago. My mother still told that story until her last year with us. She thought it was so funny.)     Looks great! I like a skillet lasagna for all the flavor, half the work. The bbq mini meatloaves are our favorite. Even with just the two of us, I make the whole 2 pounds because they freeze and reheat so well ... multiple meals for the effort.

    Seriously, I drool every time I watch you cook!
    For a little twist on the potatoes include a little cottage cheese (small curd.)
    I make a baked stuffed potato recipe W/a couple tablespoons of mayonnaise&cottage cheese, and about a teaspoon of dill & paprika seasoning. Topped W/ cheddar, green onions, more bacon bits. Delicious.

    Love your recipes! I would have used the juice from the Rotel instead of water in the first recipe. Just more flavor.

    As for removing grease from browned meat, a bulb type baster with good suction works well.

    Oh my goodness, I thought I was the only one that uses oatmeal in my meatloaf. Historically I never have bread crumbs and always have oatmeal and it just works.

      I almost ALWAYS use oatmeal. Why? Because my mama did, of course. She also added a couple of grated carrots. They're good in Mary's meatloaf. Don't think I'll add them to this Bar-B-Que one, though.

    I found that pasta at Walmart❤. Also I use the fresh green beans with little new potatoes and chicken broth. ❤I leave the skin and eyes on the potatoes on as this is where the nutrients are ❤

    On can goods if you rinse 2x and drain. In your sauce pan, add butter garlic fresh or powder, onion bits or powder, pepper, salt. Let incorporate fo it 2 minutes. Add can good cook for 6 minutes stir cool and eat.

    I absolutely love your true southern accent, not like others that feel they have to prove themselves by saying “y’all” in every sentence. And I think your calcium levels must be perfect with cheese in every recipe.

      The farther south you go the more you will hear "ya'll" used more often. It does seem to be the phrase of choice when someone tries to fake being a friendly southerner. Then we say to them "Bless your heart" or "How nice". LOLOL
      Her accent sounds east Tennessee or Southern KY to me.
