煎蝦餅 Fried shrimp Cake

- 🟢材料:
鮮蝦 600 克
鹽、胡椒粉、澱粉適量
半個蛋白(可選)
泰式辣椒醬 適量
🟢做法:
1️⃣將新鮮蝦去殼去腸洗淨吸乾水後,用刀拍爛。
2️⃣加入適量鹽、胡椒粉及澱粉(也可以加入半個蛋白)拌勻。
3️⃣反覆摔打至起膠。
4️⃣把蝦肉搓成小球狀,再按扁成薄餅狀。
5️⃣熱鍋加油,放入蝦餅煎至兩面金黃。
6️⃣取出蝦餅,配上泰式辣椒醬上蹀即可享用。
🟢Ingredients:
Fresh shrimp - 600g
Salt, white pepper powder, cornstarch - as needed
Half an egg white (optional)
Thai chili sauce - as needed
🟢Cooking directions:
1️⃣ Peel and devein the shrimps, wash and pat them dry. Then mash them with knife.
2️⃣ Add appropriate amount of salt, white pepper powder and starch (you can also add half an egg white) and mix well.
3️⃣ Beat the mixture repeatedly until it becomes a paste.
4️⃣ Form the shrimp paste into small balls, then flatten them into thin cakes.
5️⃣ Heat a pan with oil. Fry the shrimp cakes until both sides turn golden brown.
6️⃣ Take out the shrimp cakes and serve with Thai chili sauce. Enjoy!

I make these but I chop water chestnuts and green onions to mix in. The chestnuts give a little crunch.

Personally speaking, one teaspoon of salt seems quite a lot for half of kilo of prawn(with shell). Would recommend less salt. Can always taste the saltiness before adding more salt.

The white pepper is kind of pepper like black pepper & green pepper, to grind the white pepper into powder then it is white pepper powder.

有些是真的人惡攪, 有些是真的我做法欠完美別人給我的, 其實每個煮食頻道的youtuber不是每條煮食片都會完美無暇(大型團隊拍攝如曼食慢語, 大師的菜一類除外,因為它們從資料搜集以至拍攝都有強大support ), 我覺得dislike 少於like 的十分之一屬正常範圍, 多於十分之一代表煮法太差, 這樣要認真反省🌻

提个意见,虾擦干时能不能不用那个毛巾?!那个毛巾什么都擦,你用它擦,在真正干净人的眼里很恶心的,讲究点用厨房用纸吧!

我那條毛巾只供吸乾水用, 不會用作其他用途, 還會定期用滾水煮烚, 用毛巾吸水會比較乾些, 但要對毛巾又煮又烚是很繁複, 我也建議用廚房紙, 謝謝您到訪及留言!

我也是從內地來香港的外地人,其實廣東話不難學,但要學到講到十分地道的話那也是較難的,就是很小從內地來的人幾十年了還是有口音。
我用一匙的玉米粉煎蝦餅成品會裂開,用兩匙玉米粉就有煎成功,如果家裡的人吃的較清淡鹽巴就需要減量才不會太鹹
