I've found in other youtube videos it means "Calibration". I believe it changes/calibrate the temperature the thermostat thinks the air is. So like if it's actually 74 in the room but the thermostat is running a little hot or cool, you can change it up or down (+ or -) degrees to tune it to be at correct temperatures.
