  • UNSET JELLY? I tried 2 ways, 1 was a fail and 1 a clear WINNER. I show you the results of both so you can see for yourself.
    First Test. 1/4C sugar 2 Tbsp. lemon juice 4tsp Powder Pectin
    1/2C water. For every quart of jelly, doing 1 quart at a time.
    Bring these 4 ingredients to a boil then add in your quart of jelly. Quickly bring to a rolling boil, stirring constantly and let boil for 1 minute. Turn off heat and ladle into hot jar, wipe rim, new lids. Put in water bath (water should already be hot) depending on your altitude it could be 5,10 or 15 minutes. When finished let sit on counter 12-24 hours.
    Second Test. For ever 1/2 Pint you will add 1 Tbsp of powdered pectin.
    Add all your jelly into a very large pot (you will need lots of extra space when the rolling boil happens) then add your powdered pectin. (Note: the pectin will likely clump and you will need to squish them all out) Bring to a rolling boil (this may take a bit of time the more jelly you have added) once at the boil stir for 1 minute before turning heat off. Then follow the same steps as above.
