Subaru Outback Wilderness Car Camping la Poudre River w/ Dutch Oven Enchiladas

I wanted to bring you all along on a quick overnight camping trip along the la Poudre River near Fort Collins. We camped in my new Subaru Outback WIlderness, did some fly fishing, and made some Dutch oven enchiladas.

2024 Outback Wilderness here. This is the first video I came across where someone is actually car camping with the car. Big road trip to Utah next month motel and car camping. Enjoy you two.

It's 3:30am as I'm watching this, and when you pulled the lid off the Dutch oven, the enchiladas looked so good I had to run to the kitchen to grab something to eat, 'cause my mouth started watering like crazy.

You can for sure step up the camp kitchen experience with one. Also everything tatses amazing out of one so it's hard to mess up haha
Please get a portable fire pit. Or use an already made fire ring. Northern Colorado has had 3 out of 4 of Colorados largest burn scars, Cameron, east troublesome, and high park in the last 12 years. We want to keep Colorado as is and not turn it into California please.

Just a question, which model of Thule roof cargo box is that? And are you happy with the size/dimensions of it? Additionally, what has been the fuel increasement with the cargo box?

Thanks for watching and this is the Thule Cascade XT.I think it has been discontinued but in general: I like the narrow width so I can fit something else beside it if needed, find it has the right volume for all my gear, and am happy with it. My one comment is that it is very long and does go over my sunroof which makes it less usable.
In terms of fuel I have not had it off enough to compare but get 25mpg on average driving around my area and expect the box to reduce mpg by ~1-2

Sadly yes, it seems that it has been discontinued.
I can't decide between going with Thule Motion/Thule Force or HAKR (manufacturer from Czech Republic, but way more cheaper and accessible for daily drivers).

Curious your sleeping arrangement. Im 5’11”. Would I be able to sleep comfortably (extend my legs) in the back of an outback or would I need to figure out a way to fill the gap between the front seats?

Wow how do you afford all of these cameras? You just leave them there and drive away??? How do you get the footage?
Do they not require a pit to be made for fires in Colorado?
I always use a pit or fire ring for a fire but in this video I never made a fire and was just cooking with coals directly on ground in area cleared of flammable material. For Dutch oven cooking you do need airflow below the oven to get to those lower coals so putting it in a pit is not often practical. Goes without saying I take fire danger extremely seriously and was very conscience of these goals and ensuring they were fully out prior to sleep. Most fires occur due to people not putting them out prior to bed or not paying attention to fire in general.
I wanted to do things like this with my wilderness outback. Too bad mine was a lemon and got rid of it. Cool video.

IF YOU CAML OUT LIKE IN THE VIDEO ALLOT, GET OR MAKE YOURSELF A ROCKET STOVE SO YOU DON'T HAVE TKCARY CHARCOAL.
My only recommendation to the video is to have more nature and less cooking, noticed a lot of "camping" videos are starting to focus on cooking more, but from my perspective, i could just watch a cooking show if that's what i was looking for.
I appreciate the suggestion! My videos are all super nature focused but did highlight the dutch oven on this one as I love cooking with them.
I promise this is the most cooking content you'll see out of me haha

I second this. There seems to be a hyperfocus on cooking in camping videos these days. No complaint about this video as the title says Dutch oven cooking so I know what I'm getting. My ideal camping video would have little to no music as I prefer the sounds of nature. I say that as a music lover. This is my first visit to your channel and looking forward to seeing more car camping videos.
