- I thought that I'd have one of the premier authorites on rum, Ed Hamilton, on the show make one rum-based cocktail. I had no idea that that one cocktail would quickly turn into three different cocktails. To say that they next day was a bit hungover would be a wild understatement. But it sure was fun.

This is probably my favorite episode by far. I love Ed’s philosophy on cocktails. Just make sure it doesn’t suck haha.
I think Spike liked that Orange Blossom. He reaches for the glass at once when he puts it down. Like a Dean Martin show. My favorite episode so far. Ed Hamilton is a hoot.
He's definitely a walking talking rum encyclopedia Spike. What a legend!! It was also hilarious to watch you manifest a nervous breakdown for lack of measuring. Full on expected this episode to end with you sitting in the corner of the Breezeway holding a measuring cup whispering to it, "I'm so sorry, I'm so so sorry". Loved it!!

20:56, Spike is clearly feeling that first drink hit home and is in damage control mode. He stealthily pours himself a much shorter pour (like half) than he does for Ed. Little did he realize his efforts would be in vain 😂.

this is my favorite episode. ed hamilton is the best. thanks spike - i love your show. i have 14 different hamilton rums and think the world of them. my tiki game is strong now that i use ed's rums.

That was a riot! 😂 Ed is hilarious and so knowledgeable, love his approach to cocktails. I started making my own tiki drinks at home during the pandemic, at first with whatever random rum I had. Hamilton was the first good rum I got my hands on. I did a rum tasting with my hubby to compare and he turned to me and said ‘well now we are ruined!’ Once you have good rum you cannot go back! Lol!

I have to say, a way I've found to recreate the cane sugar syrup is to make a 2 to 1 cane sugar from the crystals, then add a dollop of black mollases to recreate the color and flavor

In certain parts of the country you can find (other brands, to be sure) of cane syrup. I like Steen's from Louisiana.

The original source of high quality 'Devil's Soup' (Rumm - Rum Bullion) is BARBADOS. In 1970 I had the pleasure of becoming friends with my neighbor in St. Lucy Parrish, a kindly gentleman named Mr. Ward, who besides from being an avid orchid grower and the largest land owner on the north end of the island, was the direct descendant & sole owner of the first major high quality rum distillery in the world, the Mount Gay Distillery. Started in 1698, and formally founded and in full operation in 1703 - well before all the other West Indian islands - Bajan rum was tops. For centuries Mount Gay was the gold standard by which pretty much all other rums in the world were measured.
