Given the fact that at 0:57, you can hear a page being flipped. It might had just been a random person flipping a page or whatever, but it likely was something he was suppose to read and recite to the interviewer.
On top of that, good health? NK has a major food shortage problem, how is he not starving?
Also he kept looking in front of him most of the time instead of looking at the interviewer. If chances are, you won't be seeing another friendly face ever again, let alone, anyone from the outside of NK that would've saved you if they could, wouldn't you wanna see them for as long as possible?
Lastly, if you were given a few more minutes to talk and was able to speak freely, why wouldn't you?
So ya, many angles would definitely suggest that this was scripted.

I certainly don't know why he wanted to go North Korea, however, according to the article where I found this video, he was forced to sign his confession papers even before he was interrogated by the police, let alone knowing what he was prosecuted for. Moreover, the unwillingness with which he doesn't want to discuss the conditions of his arrest should makes us think a little bit before yelling out that "he doesnt deserve help because he's stupid".

For those of you who understandably don't think he's American based on his "European accent," I know first hand that indeed he is American, and that he's "not all there." While I've never met him personally, I do have friends here in Korea who have dealt with him through art clubs. He fancies himself as a brilliant writer/artist who wanted to create a utopian comic book. Going to NK was his research. He's delusional and clearly eccentric, and putting on the weird accent is all a part of that. When you travel, you can pick up certain dialect quirks and he's intentionally done so. I see it a lot, actually.

One of my friends has been there, and said the city of Pyongyang is far safer than cities like Guatemala city, San Salvador, some cities in Brazil + East Europe etc.

There's always the risk of being detained if you go to North Korea. Don;t expect help because you got your self in that mess. Waste of diplomatic time bailing out these dumbasses all the time who think its fun to go to such a horrible place.
