The Old Goat is holding the beater. We do lots of canning. Tomato sauce, T. Juice, Broths, Beaf Roast Cubed left over in the freezer, Potatoes, Sweet Potatoes and Green Beans-206qts last yr. This makes me want a Freeze Dryer even more. Thank You for all your videos!
9A here. I 'm with Ms. Sheila. I just pulled up my pole beans (bugs), squash (heat), and cucumbers (they were just done). I amended by beds and threw in pollinators to enjoy until I am ready to plant my fall stuff. I started eggplant last night and will start tomatoes and peppers soon. Everything else will be direct sow. I am growing 12 hossinator tomatoes. I LOVE them. We got off to rocky start but they are doing great now. I have a tomato with salt and pepper for lunch every day. Besides what we have eaten, half have gone in the freezer for later and the rest are getting freeze dried. Also, if you haven't freeze dried halved cherry tomatoes, try it. Such a great, crispy snack and they are great on salads.
When I took the master gardeners classes, they were at our extension office at the courthouse. Our teacher said they find knives often where men leave them in the bushes and forget them after they get their tags, license, etc. lol. Life in the south. My husband carries at least two. We ate our first tomato for supper tonight with green beans, potatoes, cornbread, and corn beef hash. Yum! 🍅 your hair looks good fixed like that Sheila. Lots of preservation going on here too.
I haven't ever fermented anything as I don't yet have the necessary crock/lids but I would love to get into it. Red onions, beets, pickles, cabbage, eggs, .... the possibilities are endless. Can't wait to get started. Wish I had a freeze dryer too

Up here in Minnesota, loads of green tomatoes, pole beans are climbing, mustard greens (my first time growing) are done, kohlrabi is growing and some tiny seedling eaten by cutworms (I think?)... Ol' Goat behind Sheila by the old hand mixer!
Have been freezing, freeze drying and even trying waterbath canning now with our abundance of tomatoes. Feeling grateful. See the old goat on the shelf withe the USA cutout and standing behind the hand mixer. I fermented / made sauerkraut this past season for the first time. Plan to try fermenting jerusalem artichokes when i harvest those. Wish me luck. 😆

What an excellent episode! Mama Hoss, that tomato powder is also great to add to your homemade taco seasoning. I learned that from That 1870's Homestead. Fun fact... You can grow every ingredient needed for good homemade taco seasoning and with that freeze dryer you can have it done in a jiffy.
I received my fermenting kit from y'all last month and fermented my first time a few weeks ago. I decided to use some of my green blaze green beans fresh from the garden and made fermented dilly beans. They were delicious!
The Old Goat is on the 3rd shelf up behind Sheila hanging around what looks like an egg beater. I like to make Kimchi! Pickles are what I would like to do this year since I have had a bumper crop of cucumbers. I have a tomato jungle growing but tomatoes are just starting to ripen. I can't wait to do my tomato taste tests with all the Hoss varieties I planted. I got a little carried away with my tomatoes! Thanks for all the great growing advice!
A friend of mine lost a whole freezer of creamed 🌽 corn by stacking it warm. It soured before it froze. Glad you advised about that. Lots of work gone. 😢
Thank you for the seeds. I like to ferment sauerkraut. Finally got some rain this last week. Picking peas, broccoli, celery, and parsley and red romaine lettuce. zone 6a.

I freeze mostly to hold vegetables until I have enough to do a canner load, like when you first start harvesting. I especially like to freeze tomatoes as they come off. I wash, core, and squeeze the seeds out and separate paste from the other tomatoes. When thawed the skin slips right off the tomato. Dehydrating the skins, and processing the tomatoes is quicker. The goat is on top of the old egg beater! Great job to night!
My favorite ferment is salsa. The old goat is behind the egg beaters. I have lots of cherry tomatoes, will try fermenting some of them. Have been dehydrating them to turn into a powder. Wishing I had a freeze dryer to preserve more of the nutrients.
I sit here for 2 hours every morning in the dark mostly, and watch and rewatch you guys videos. I have planted my Phacelia behind the corn and going to try and get the Buckwheat out today behind the peas, winter squash a.n.d..... m.a.y.b.e I might cut okra one more time and take it down. Those plants are getting on over 7 foot tall. All that Kodiak Mustard did a great job last year on the nematodes, even though we had that bad freeze and I lost most of it. I didn't even get to plow it in because of that shoulder replacement. I have one request. Would you guys make another video on sweet corn with any new verities? I am trying to pick out what I want to plant this fall and I see there was a new one I hadn't noticed last year. I am not fighting the heat and bugs this summer again. I'm letting the cover crops do their job, and its gonna be all corn in the fall. Thanks you guys. Always enjoy ya'll.
Shelia, make sure you freeze dry some fresh corn. SO GOOD!!! Old goat is on Shelia's side behind the hand mixer. I fermented some sauerkraut and it ended up way to salty (I followed the recipe). Want to try that again.

The only thing I have fermented is cabbage and cucumbers but after seeing the carrots I think I am going to do that, we have a freeze dryer too, and love it, have not tried figs but that is now on my list, the old goat is at the beaters!
I think the old goat is hanging out on the top shelf behind Mama Hoss close to the USA sign. I'm going to try fermenting this year...I think. I haven't worked my nerve up yet lol. But when I do decide to do it, I want to do pickles.
Mama hoss......use a big nesco cooker. I used roma tomatoes....halfed. Cook for 2-3 hrs. I spooned off the extra juice. When done removing most of the juice. I placed in my vitamix blender.....ran until tomatoes chopped up ....into a sauce. Then pour into a pan ....heat and can. Very simple and quick
I enjoyed gardening ever since I was a child and I really enjoy it.

Pressure canning dried beans is a good way to have them ready to cook quickly.

My favorite thing to ferment is spicy carrots (like you get at the mexican restaraunts) and sourkrout.
