Some of them are done by the writing team to make sure the network censors are paying attention (they usually aren't), part of it is as a bonus for parents watching alongside their kids or for the kids to realize after re-watching when they're older and having an _extra_ good laugh.

I think making some of the characters nothing like they used to be or changing their gender for the sake of making interesting characters was a good idea. I fail to see any issue with it, and I think CH Greenblatt knocked it out of the park on this one yet again
I can see why some wouldn't like it if they're attached to the old versions, but I ultimately don't see a problem with it either - the old versions still exist, and when you do a reboot, you're allowed to write the characters how you want them to be, which means they can be as similar or as different to the original(s) as you choose. So yeah, I get why some don't like it, but I approve of it being done at the end of the day.
Season 3 is out, and I'm still waiting for a chapter where "Loopy de Loop" stars in the chapter, obviously without leaving Jabberjaw and Magilla Gorilla aside.
