There are very few bacteria that eat fat on its own, and while the organics do harbour potentially harmful bacteria, when you fat with masonry you get saponification of the fats, (hence why they are white and not yellow.). I find this video quite interesting myself as a sewer pump technician. The fatbergs you see here are actually very common in lift stations and treatment plants. Hopefully videos like this bring more awareness to making the lives of your local municipal workers easier. Fatbergs like this are capable of bringing lift stations to a stop and flooding people's basements with raw sewage. Fatbergs are the nicer bits of the sewer system. You guys should see the hair monsters that can spawn in a sewer.
