Thanks dear! For couple of days until they are dried hard like other pastas we buy. I don’t put them directly to sun but on a table clothes, partially opened during day to get air dry. Just stir ones or twice a day. Then keep in bags. I would still prefer refrigerator but they also keep at room temp.

I really like this! I will try it. Can you show us other ideas for serving as well? Walnuts and cheese are very different to the "usual" pasta we know here, so I am interested to know other ways as well.
You can toast the pastas erishtes in some butter olive oil mixture just to give some color and add water to cover and simmer until soaks the water and soft. You can Add more if needed. And serve with your favorite pasta sauce or as a side dish. Or make soup that uses pasta and use these instead. I have green lentil soup that I use erişte so I’ll use them in there as well
Can you do this with tomatoes and if so how would you do it also I have used chicken stock instead of water to make flavored noodles you can also use beef stock
