  • Hi and welcome back! Today I made for you my version of sancocho or Caribbean root vegetable stew. Most Caribbean countries have their version of this soup/stew.
    Here are the ingredients:
    2 lbs of beef ribs
    1 lb beef stew meat
    3 chicken thighs, skin and fat removed, cut in half
    1/4 cup sofrito
    1 bullion cube (chicken or beef)
    THe root vegetables are to your liking!
    This is what I used today:
    1 large potato
    Pumpkin or calabaza
    Yuca or Cassava
    Malanga lila (Yautia)
    Boniato
    Green Plantain
    Ñame (the translation in English is Yam)
    2 quarts of water
    Adobo Goya
    2 tablespoons canola oil
    5-6 sprigs of cilantro
    1 ear of corn, cut in chunks
