I have never played any sky blocks, not sure how the mechanics work for it. With that being said I am not sure if it would be in the scope of what MCreator provides. It may require coding or may be above my skill level for understanding.
I don't think the plant element supports water logging but if you design your plant as a block it would work. The plants and blocks are basically the same thing, but blocks have more features overall.
Time does not really control much other the time of day and moon phase. So it would not be possible to undo events in the world like block placement. At least not without coding. However you can disable the game rule doDaylightCycle and then control time yourself, this would allow you to change the time speed using your own script. I did this basically when I made my real time mod.
