This topic was already explained in almost the exact same way as it was in their present day conversation. They would've had to tweak the present day scene to not have that explanation so this one could have reason to stick around.
While I agree it should have stayed, I kinda understand why it got cut. This scene would undermine the continuation of that big reveal from the tail end of Episode 5 and cause Episode 6 (which was the big showdown) to have a slow-paced beginning. And it is most likely can't be fitted into earlier episodes without revealing Fisk too early in the game.

At the end he says that as soon as Eleanor pays off her late husband's debt she's done, but then in the show he tries to kill her for backing out after she's already payed her debt and more. It makes him seem like he went back on his word, which isn't beyond him as seen with the Punisher debacle but also isn't something he regularly does with his associates. I doubt he would have done something like that to Leland or Gao.
We don't know if kingpin is really trying to kill eleanor. He just wanted to talk he said and why he didn't use kate as hostage. I think he's considering Eleanor's worries about her daughter and he didn't intended to kill kate as long as she's working for him. This is a stretched, I know.

But with that aside, I'm really happy for these actors (Vincent D'Onofrio and Charlie Cox) that they're now going to be able to interact with the wider MCU. I know they're excited about it. Maybe a few tonal sacrifices, but overall exciting.
It doesn't need to be 13 episodes though. Daredevil came closer than the other shows to justifying it, but even that had filler moments (Ellison setting up Karen Page was boring and pointless for example). 10 episodes is the happy medium.

They wanted to reintroduce both Matt Murdock and Wilson Fisk during the same week NWH and The Hawkeye Finale were released, which makes sense. It was all supposed to be a surprise for the fans.

That's because the dinner scene took place much earlier in the Timeline. It would've happened all the way back during the Netflix Daredevil timeline (2015-2018). Hawkeye takes place after the blip which would explain why Kingpin seems different. He underwent some kind of change during that period. He might have taken some black market serum.
They should've had two extra episodes. One earlier in the season showcasing Clint's origin and other in between episodes 5 and 6 to place more focus on Fisk, the show's main antagonist. Imagine having actual time to see why Clint feared Kingpin getting involved before the season finale? We also could've had a continuation to that police detective side plot that was somehow forgotten.

The main issue with Fisk is that D’Onofrio has no chemistry with anyone in this show’s cast. They should have had him change up his performance a little bit. The MCU is good at having everyone interact and be consistent with their portrayals but this is something that should have been changed. This also shows how good Marvel Studios’ casting is that everyone can interact smoothly. You can tell D’Onofrio was not casted by Marvel Studios.
