I have tried chuck roast 3 times in the ip, IT NEVER TURNED OUT!!! TThe last one was eatable but it was still hard. You never realy showed how yours turned out. You just went right to the gravy. Show sticking it with a fork. And you did not show your settings. I did not see the meat breaking apartment, I saw the fat lines coming apart.Sorry to sound bad, but after 3 times, I will never try it again. I waisted 3 nice cuts of meat. I will stick to my small roaster and simmer it for hours so I can pull it /shred it apart. My way has worked for me for years. The ip is nice for some things, but not everything. I have watch to many ip videos where they never realy show you how it turned out, or called it falling apart when it was just the fat line breaking. Just so you know, I'm am 61 years old and been cooking for years. I may not the best, but I think I do a good job on what I cook....
you probably are making the mistake of doing the "quick release" of steam after it's done cooking. DON"T do that, let it slow release on it's own and in a couple of hours it will be tender as all get-out....you're welcome, Rookie
