I read this recipe in my Ball canning book today and said no way.... lol but after watching your video my little cucumbers i have left from 1/2 bushel (I used 16 pounds of them to make dill pickles) - will get started on this recipe. We have canned dill pickles and bread and butter pickles in years past but not gherkins. Thank you.

I would love to try these. They seem amazing, and having the longer ones seem perfect, because I can never eat just 1 or 2 of those little pickles you always need more than that. LOL. I was wodering should I really use a large cinnamon stick or is there a way to cut them Smaller? Cuz what could I do with the cinnamon stick after it was used in the pickles. It is expensive just to throw it away I think. And the left over cinnamon stick might taste vinagary. Or would you grind up (how much) some and put it in that way and hope the brine isn't to cinnamony tasting. LOL Just trying to save some cost and not waste food. But I really would like to make them.. Apparently you don't add any pickling crisp to it for added crunch because they turn out crispy and cruchy without it ? Sorry I am totally new at this. Your advice and help would really help me out and less anxious thank you very much for all you do to help us learn from you . 🎉🎉🎉😊😊

Hey there! I have never tried ground cinnamon, so I'm not sure how that would work. You could do a smaller piece of cinnamon stick if needed. We buy the organic cinnamon sticks in bulk (not from the grocery store!) and the price is very reasonable per stick that way. At the grocery store they are SO expensive!
No pickle crisp needed, as the soaking process takes care of that. They are super crunchy!
      I hope that helps!

I've confused myself. The video says to put boiling water over the cucumbers twice on day 1 and then again on the morning of day two. However, the instructions say to start day one in the afternoon, pour boiled water and leave overnight, then pour more boiling water in the morning on day two. So, am I pouring boiling water twice or three times before I start adding salt and other ingredients? I'm concerned that they'll get mushy if I put them in boiling water too many times! 😂 Thanks for the video, though. It definitely made this process seem a lot less daunting. Yesterday, I told my husband I was in over my head. Now i feel more confident and excited. Well, except for the boiling water bit! 😉

Hi there! We were only able to find "small" cukes at the store... we recorded this off-season and our own cucumbers hadn't come in yet. Typically we use the tiny ones and they turn out really well. You can buy "gherkin" cucumbers, but we prefer the straight 8 variety, picked every day to make sure they are no bigger than a thumb!

    • @AModernHomestead

Yes, they have that same sweetness, the same flavor, and the same crisp texture. The only thing that is different is the aftertaste. The ones from the store are typically made with corn syrup and (for me at least) they have a bitter aftertaste. These don't!
