Let me know how it goes if you try to make it :) Salted caramel financier ▶12 Financier (about 34g) ▶Ingredients (Caramelized Pecan) Brown Sugar 50g Water 15g Pecan 70g Unsalted Butter 5g Salt 1g (Salted Caramel Sauce) Sugar 50g Light Corn Syrup 10g Whip Cream 60g Salt 2g (Salted Caramel Financier) Egg White 100g brown Sugar 50g Honey 15g Salt 2g Almond Powder 60g Cake Flour 20g Bread Flour 20g Unsalted Butter 120g (Hazelnut Butter 90-100g) Salt Caramel Sauce 60g Caramelized Pecan (about 100-110g) To make caramelized pecans 1. In a small saucepan put brown sugar and water, making sure that the water touches all the sugar 2. Bring the mix to a bubbly boil and if have a thermometer should be 115 Celsius (watch video for reference) 3. Then turn off the heat and add in the pecans when the bubbles are small and syrup is quite thick, and quickly stir with a wooden spoon and keep on mixing until a white sugar forms continuously stirring 4. Put the heat back on medium high and stir continuously so that the sugar crystals melt and it becomes a caramel color 5. Then melt in the butter and transfer to another bowl where you will mix in 1g salt Salted caramel sauce 1. Mix together the sugar and corn syrup well in a saucepan and put over Medium high heat 2. Use a whisk and continuously stir the sugar 3. When all the sugar starts to change color make sure to watch very carefully and never stop whisking 4. If you like a sweet and soft taste, only heat up until a light caramel brown and if you like a less sweet and bitter taste heat until a darker color 5. Turn off the heat and mix in room temperature cream little by little, making sure to mix well in between additions 6. Then add in salt and whisk it in 7. Transfer caramel to a bowl to cool down To make financier First make brown butter 1. Put all the butter in a saucepan and melt over medium high heat 2. When all of it is melted turn down the heat a little bit and let the butter boil until it starts to darken and a white foam appears on the top 3. Stir occasionally with a rubber spatula and check every so often by swiping across the butter to see the darkness level 4. Then strain this brown butter into a bowl 5. Next, get your financier pan and butter all sides using a brush and softened butter 6. Then measure our 60g of caramel sauce 7. Also, chop up the pecans in preparation to make the dough 8. Then preheat oven to 392f or 200c 9. To make the actual dough add sugar, honey and salt to the egg whites and gently whisk a white foam has formed (can use an electric mixer) 10. Then sift in almond flour, cake flour and bread flour snd whisk in gently by hand 11. After all the powders are incorporated whisk in the cooled browned butter until the batter turns brown and all of it has been mixed in 12. Then, whisk in the 60g. Caramel sauce you measured earlier 13. Mix the dough once with a spatula to make sure there is no unmixed parts and then put it into a piping bag 14. Pipe the batter into the cake pan/mold until it is about 80% filled and then place the caramelized pecans on top 15. Bake in a 392 f or 200c preheated oven for 3 minutes and then turn down temperature to 338f or 180c and bake for another 10 minutes 16. Let financiers cool for about 5 minutes in pan and then gently take out and place on a cooling rack 17.Enjoy!
