On this episode, Kevin heads back out into the woods for some comfort food bush cooking on a Tuesday. It's called Chili-Mac in the south and American Chop Suey in the North. A pasta dish that can easily be made in the canteen cup and warm the soul.

Thanks for Watching Paul Sidener, I'm glad you enjoyed the video and left a comment. Portuguese ketchup refers to hot crushed red pepper mix which is extremely spicy to the faint of heart. Growing up in an Azorean household I ate a lot of spicy food growing up and my taste buds are shot. So the going joke is that we use hot crushed red pepper as ketchup, hence the term "Portuguese ketchup". I hope this explains it and you continue to tune in to my channel. ATB ~Kevin

It did indeed Msilverhammer, one of my favorite pot lucks to make and I always have a few frozen Tupperware containers in the freezer full of it. A perfect bush lunch for sure and you can brown the hamburger a head of time so it won't spoil on an extended hike. Thanks for all the support my friend.

Yes, I went to basic training at Lackland AFB in San Antonio, TX so I learned about chili mac down there. Same exact thing and just as delicious where ever you live :) I scored that grill at the $1 Store... yes a buck - go get one :D Thanks Lola, I'm always appreciative of your comments - stay lost girl!
Now, that’s a nice meal to have, when you’re out in the wild, and you’re so hungry you can eat bark with some moss sprinkled on top. The flavours just exaggerate to the extreme. You gobble down the food because your mouth is drooling and you’re going to dehydrate if you don’t. haha. Thanks. Tony

That was awesome, man! Looked so good. I might have to try this one myself either at home or in the woods. I know what you mean, some dishes taste better the next day after the sit a while and all the flavors get combined, but out in the woods its all good!

Great job, Kevin! My father in-law invented something similar. We call it "The Special" and it's now is being handed down from my hubby to my kids. Love your lid! It's one of my personal faves. So versatile! I need to go cook something now. LOL!

We have the same canteen lid! I built mine myself, but it looks like a 4 yr old did it. If anyone asks, that's what I say happened.

You need 2 cups to speed up the process. Your little rack works great! American chop suey is always a great meal.. Make a big pot and heat the leftovers in the oven the next day, with a load of cheese.. I may have to go look to see if I have the makings. Thank you for the video, Kevin. See you next Tuesday.

Oh yeah, chili mac is another name for it but no matter what you call it ...epic yumminess. Mike Favia's spices are no joke and that Portuguese ketchup is really crushed red hot 🌶 peppers to give it an edge. I like spicy food rather than adding salt, I'm trying to reach 💯 years old 😂 ....PBC OUT!!!
I like spicey too... its just better haha now if you're looking for that 100yr mark maybe a glass of Porto to warm the bones haha. I like the American Port but real Portuguese Porto is where its at!

Oh yeah Ed, down south and in North Dakota they called it chilli mac on the Air Force base. Oh heck yeah, I'm still working on the Bushcraft Basecamp but its going slow. Now that the ground is thawing a bit, I need to remove that humongous poison ivy root ball that's present. The root ball is about 10" at the base and I need to dig it out with a shovel because its right in the spot where the support beam is going. I would hate to have done all of that work and it re-spawns this spring, stay tuned my brother!
First video I watched of yours and that looked like an awesome meal. I'm gonna have to try that, not a huge fan of red pepper but I'm sure that's optional.

Well Dee, where to start on this epic comment. First off, I film these way in advance and store them away - I've usually got 2 or 3 videos in a holding pattern. So I was drinking my coffee too. Secondly, hot crushed red pepper is considered "Portuguese ketchup" because Azoreans like myself eat so much spicy food that our taste buds are scorched. Basically, ketchup has no flavor anymore and I can barely taste Texas Pete's heat so I basically spice up all my meals with molten lava. Most people refer to that recipe as "Chili Mac" but in New England we call it American Chop Suey for some reason. BTW, I picked up that rack at the dollar store - yes $1 - go get it! Anyone ever make this and dehydrate it? Wondering if you could dehydrate the finished product or if you’d have to dehydrate the components?
Great question North Country Outdoors Guys and a timely one no less. My birthday is on Monday and my wife bought me a dehydrator as a gift. I usually make an entire pot of this and freeze the leftovers in single and double portion Tupperware containers. I will defrost some and give it a whirl and see what happens. Because I don't like it dry or without sauce I would have to guess at minimum I would probably need to bring some extra sauce with me. Lol, Well unfortunately that's the only requirement is to have a canteen. There's no club to join or anything like that in, just have fun.
I don't know but that looks like goulash but in ours we just add stewed tomatoes, tomato soup, couple shots of worshire sauce, elbow macaroni. But then that's the awesomeness that is america. All these different food cultures coming together. Nom Nom!! I'm going to have to try adding the bell pepper sometime to ours.

Thanks Mark, the Quebec seasoning is like a steakhouse seasoning on steroids. Salt, pepper, granulated garlic, paprika and some other stuff. I'm going to order some up and send them out, you're on my list brother. Nothing wrong with a chicken pot pie on a cold Canada day ...oh boy I cuts added pot pie to my CCT to-do list 🤣👍

Wow Brandon, I can't believe I didn't reply to this comment - I remember reading it. Slipped through the cracks.. Yeah, this recipe has been called a goulash, chili mac and American chop suey... all correct. Mike is with me on every single cooking video for sure, he gave me the orange and black knife and I always use some Spice House seasoning. However, I've never tried the dirty salt, save that for the PBC Gathering 😉 PBC Out!!

Thanks Andrew, it came out well for 45 different steps 😜 But everything is way harder in a canteen cup. I basically walk in the woods until I find a clearing, some downed trees or even a large rock... those make for some great camping spots. Well you are up there as my favorite outdoorsman and you are very informative and make it seem realistic for the average person to be able to do some raw camping.

After seeing this video and some more that popped up as suggested videos .. instant subscriber ,, I personally prefer a little something different than meat and rice or meat and ramen noddles .. a friend from Massachusetts introduced me to some New England / Portuguese style foods that are popular in the Fall River (Riva). As she would say ..

Heck yeah cillaloves2fish, I grabbed that grate for $1 at Ocean State Job Lot which is a bargain store in the New England area. I've been cooking with a canteen cup since 1971, but I use the canteen cup stove, an dthe cup lid. Sometimes I cook with wood, sometimes with Esbit, and sometimes with a Trangia. That's kind of the whole point behind using a canteen cup. Seems like kind of a waste to use a canteen cup that way.
Looks like a dangerous spot for a fire, too. That's a perfect spot to let an ember pop away from the fire, and smolder for hours before flaring up. Doubly so since you didn't clear out around it before building it.

So rest easy my friend, there's no chance of a forest fire or traveling embers. The idea behind the canteen cup on my UA-cam channel is for the purpose of bushcraft eating and drinking or whatever survival function it can provide. I'm disappointed you did not enjoy the video and had no content for me to go learn from.

Aye, I think only in New England its called American Chop Suey.... folks on the east coast down south say they've never seen that before. Others out west said it looked like goulash. When I was in Texas for basic training they called it chili mac and I ate it almost every day. Thanks for watching Chris, sorry there was no cheese.

American Chop Suey or Chili-Mac ????? I would label your concoction a Hamburger-Mac-Suey ( Or I cleaned out the leftovers in the frig ) then anything else. The completed meal did look mighty good and I realty liked your grill ( rack ) over the fire for the cup..
Hers what I'm use to......Chili -Mac is just that Chili and Macaroni. Chili has Meat , Chili Peppers , Tomatoes , ( Kidney beans if you like them , I do ) , Onions and at times garlic. While Chop Suey is a conglomeration of vegetables ( Plus Water Chestnuts , Bean Sprouts ) and Oriental seasoning.
Great comment and thanks for watching but you're way off Chuck. Chili-Mac is that gross thing they make down south with chili mixed with macaroni, had it way too many times stationed in Texas. Chop Suey is that bogus Chinese dish you described with bean sprouts and boiled vegetables. However, "American" Chop Suey is exactly what I made right there... beef, onions, garlic and noodles ...and some folks use bell pepper. I'm sure its a geographic recipe that you'll only find in New England and its been described 1,000 ways in the comments of this video. I really appreciate your feedback and detailed comment because that shows me that you actually watched and enjoyed it. Thanks again and please subscribe for more bush-hack recipes.

Probably one reason we call it Chili-Mac. Guess it is a regional thing like that New England version you made in this video. . I'll probable be drummed ( banned , tossed , thrown , exiled ) out of the south by saying this but your New England Version does sound good. What the heck , i even like a New England boiled dinner , guess theirs no hope for me.
