Ingredients
12 flour tortillas
3 cups of half and Half
2 cups of cheese Best with pepper jack (mozzarella or chihuahua cheese works great)
1 Tbsp AP flour
2 Tbsp butter
1/2 tsp white pepper
1 tsp chicken bouillon
3 dashes of nutmeg
Dashes of paprika or smoked paprika
1/2 onion
1 pound of deveined shrimp
1 small package of imitation crab meat or best with king crab meat

This was my favorite dish at Chi Chi's, and it's been decades since our Chi Chi's restaurants closed in Louisiana. I can't find any seafood enchiladas at the other Mexican restaurants around here that are anywhere near as good. I can't wait to try your recipe!

I loved Chi Chi’s food. I always ordered chicken and beef Chimichanga’s and sopapilla’s with strawberry and chocolate sauce. Maybe you can recreate those if you haven’t yet.

I'm from Cleveland Ohio and we had a Chi Chi's not far from us in a city called Independence. OMG there seafood enchiladas were delicious. I can't wait to try this and my bf is from out near toledo and he loves chi chi's too

MMMM oh THank you!! CHi CHis was the go to date restaurant in the mid 80's.. Was so good back then.. they kind of went downhill after a corporate reshuffling thing and all the ones in my area closed. Glad to have this recipie. :)

For anyone who doesn’t love ground nutmeg, get the whole nutmeg and grate it yourself. Freshly grated tastes much less intense than the pre-ground form.
If you can tell me where to find it, I sure would. Every time I go to the store I'm searching, but I can't find it.
@@marionlogan6069 It’s been a while since I bought it, because I’m not a big fan of nutmeg. The last I bought was Badia brand. It’s in a 0.5 oz. plastic ziptop bag with about four pieces. I live in Alabama and I probably bought it at Publix, however I don’t see it on their app today. Maybe check with a Hispanic grocery or a store that stocks a lot of Badia spices. I’m sure it costs more than what it’s worth to order on Amazon. 😎
I moved to the Midwest a few years ago from Texas and man I’m craving a chuychanga from Chuys…the roasted chicken with jalapeño ranch is just divine! 🤤

all the meat you eat will be much fresher if you kill it and gut it yourself, kinda like eating dead plants. i have brought home catfish still alive that from filet table to dinner table they were almost still swimming and tasted amazing

This was definitely my favorite food as a kid! Only on birthdays though...it was always Showbiz Pizza for games then Chi Chis for dinner. Been making this exact recipe for years now (only difference is i add green chilis, smoked paprika, and top it off with pico!) Even brought some to work once and got everyone hooked, so they started paying me to make them some! Easiest enchiladas to make by far! Thanks for posting this, as the original video recipe was kinda lost in the youtube ether.

Eau Claire, WI Chi-Chi's early 80's. Pollo Magnifico was my first choice followed by their seafood options! Actually the margaritas were the first choice but that was a given..... :)

I would love to see your tamale pie or casserole or whatever you would call it. I LOVE tamales but love an easy bake version. Maybe something that includes corn husks on top and bottom to impart that flavor we all love.

Steph, back in the 80's there was a fast food chain called Zantigos. They made a Hot Cheese Chilito that was THE BOMB..! It featured a Salsa Verde based Chili wrapped in a Flour Tortilla with TOO MUCH melty, gooey cheese and they were Heaven if eaten when still piping hot.
Can I ask you to see if you could recreate this magical treat for us..?
Steph, do you do a light fry in your flour tortillas before you fill and roll like you do with corn tortilla enchiladas? It looks scrumptious!
Great question! These are homemade flour tortillas and I trust they wont get soggy. If you are using store bought, I would fry them a little and then roll them right up. Hope this helps ❤️ Steph

There's a restaurant in Marina Del Rey called killer shrimp Well they make this awesome flavorable Broth with shrimp in it it's so good so flavorful and the bread is so good too it's to dip inside the broth I would love to see you recreate this recipe. It's on the menu It's called
