The best olive oil for this is the “olive oil” (the yellow) because is therm resistant and the extra virgin oil (green) don’t resist the high temperatures, or the canola, sunflower or soy oil.

I do not recommend leaving it out as it will change his taste and wont last long if not careful when opening and serving it, keep it on your fridge properly and it can last 2-3 months easy (if you dont want the quality and taste to get bad overtime dont store it for months longer than that)

You can add any nuts you want or seeds! I like mine with peanuts, a little bit of sesame seeds and pumpkin seeds!
