I wrote this up for myself and figured I'd share it just in case anyone else wants it Pan Size: 18cm*12cm Brush some oil onto the pan ~ 1. In one bowl, combine 2 eggs with 1 pinch of salt, and 1/3 cup + 1 tbsp. (85g) of sugar, then beat the mixture together until you get a foamy texture. 2. Sketch some lines on the mixture. If the lines stay for 3-4 seconds, it means the beating mixture is in perfect condition. 3. In a separate bowl, combine 2 tbsp. (30ml) of milk, 3 tbsp. (45ml) of oil, 1 tsp (5ml) of vanilla essence, 2 tbsp. (15g) of cocoa powder, then mix. -For better mixing, it is better to mix the cocoa powder with milk and oil first, so that you can get a lumps-free cocoa mixture. If you mix the cocoa powder directly into the flour, you may get cocoa powder lumps in the cake even after baking. 4. Add the cocoa mixture to the egg mixture then beat them together for 1.5-2 minutes. 5. Sift 1/2 cup (60g) of all-purpose flour, 1 tbsp. (7g) of cornstarch, and 1/2 tsp (2g) of baking powder into the cake batter. -Mix the dry ingredients by using a whisk in a circular motion. If you do not mix it properly, the cake will not bake perfectly and you will get hard or dense cake. -Use a spatula for even mixing 6. Pour the batter into the pan, make sure to gently tap the pan to get out any unwanted bubbles. 7. Bake it in a preheated oven for 30-35 minutes at 160 degrees(C)/320 degrees(F) depending on what units your oven uses. ~ 1. For the chocolate filling you will pour on the finished cake, combine 3 tbsp. (22g) of cocoa powder (sifting is unnecessary as lumps will break when the mixture is boiled), 1.5 cups (375 ml) of milk, and 1/3 cup (70g) of sugar in a bowl then mix 2. Boil the mixture over a medium flame, do not use a high flame -Make sure to continuously stir, otherwise it will burn 3. When the mixture is slightly thick, add 1 tsp (5 ml) of vanilla essence, then mix -To check if the syrup is ready, dip a spoon into the mixture then sketch a line on it, if you see a thick consistency the syrup is in perfect condition, then turn off the flame 4. Let the syrup cool completely. Stir the syrup continuously during cooling for a smooth texture ~ 1. After the cake finishes baking, use the end of a wooden spoon to poke holes throughout the entire cake. Try to make them all evenly spaced, approximately one inch apart 2. After cooling the syrup, check for the correct consistency. If the consistency becomes thinner, boil it again. If it is too thick, add a little more milk to it then boil it again to get a perfect consistency 3. Once the syrup is perfect, pour it on top of the cake, and spread with a spatula. Make sure to gently work the syrup into the holes. 4. Once done, feel free to add the toppings of your choice (i.e. chocolate sprinkles) then refrigerate for 30 minutes. 5. Enjoy!
