Honey Garlic Sauce Ingredients
Honey 1/2 cup
Soy sauce 2 tbsp (I have used my homemade soy souce)
Minced garlic 1/2 tsp
Minced ginger 1/ 2 tsp
Ground black pepper 1/4 tsp
Corn flour 1/2 tbsp
water 2 tbsp

What type/brand of soy sauce did you use?
That looks like a thick sauce like oyster or hoisin sauce.

What if my sauce gets hardened? What do I do to fix that
It shouldn't, add more liquid. And perhaps not use such high heat.
If it's crystalizing then it might me sugars out of the honey.
I use a little mirin or sweet wine as well for a little depth of flavour while still being sweet. If too sweet balance with more soy (and/or a dash of sesame oil).
If you use alcohol (like mirin) evaporate the alcohol out. But you can add more water no problem.
If it's hardened after cooling the wine should do the trick and don't abuse your honey. xD

Also what made your sauce harden? Just too thick or did the honey caramelize? Because that would change the taste
Mine tasted awesome. The reason it hardened was because of too much honey. But water fixed that. About less than half a cup. It then gave a sweet and slightly bitter taste that it's supposed to give 😁😁. Works wonders with chicken

I'm Australian and we have very strong tasting honey so I'd be too scared to put too much in. A bit of sweet wine or mirin (Japanese cooking wine you can buy all over the place) and heat should make the honey less dense.
But if it still tasted amazing then why add anything to what already works.
