These are very pretty. I am new to chocolate (just made my second batch of chocolate from raw beans), and I've not messed with ruby chocolate yet, but I intend to! How much lemon flavor does the lemon extract impart on the final product? I imagine you could also use everclear or something if you just needed a volatile carrier for the glitter.
Welcome and thank you!! It leaves a hint of lemon I’d say. Yes you can use vodka or even 200 proof food grade ethanol too. I haven’t tried everclear myself but I’ve heard people mention it!

Aww thank you so much!! 💖 Oh great question, yes you can totally decorate a chocolate mold in advance if stored properly. You'll want it in a cool and dry room (under 70 F about and less than 50% humidity). They can be stored safely for a really long time so you will be good for just a few days. I've decorated molds a month in advance before shelling and they came out great!
That is definitely another technique, which I'll be getting into soon. But for the metallic silver I want it to be just the silver without cocoa butter so it's better to use alcohol so that it evaporates and leaves just the powder. Of course mixing metallics with cocoa butter is also an option, I just didn't use that technique here. :)
@@sharondhillion471 The lemon extract is naturally high in alcohol content. I'm not sure, I've never seen alcohol free lemon extract. If it is then it won't work for this because it won't evaporate as quickly as you need it to! :)
Thanks! I have this little chocolate tray made with acrylic. I bought it from Savour School shop but I don’t recommend as shipping from Australia is a lot 😂 But if you want something like it I would look on Etsy and there are people who do custom sizes!

All of the chocolate is formulated to be delicious right out of the package, of course there are different sweetnesses, but they are made ready to go :)
Hi Brittnee. I have a chocolate challenge for yah. Areo chocolate bar. Challenging part is the airieness in the chocolate bubble holes. Please try to make it. I believe how to cook that channel tried several different methods on creating the airieness in the chocolate. I guess it very difficult

Great! So lemon extract or vodka is used because of the high alcohol content. They will evaporate and leave just the powder, so are used with chocolate often! What you want to avoid is water based colors because the water base will not mix with chocolate. So yes you need to use oil based colors or fat soluble colors when working with chocolate. The reason the alcohol doesn’t matter is because once it evaporates it’s gone! 🤩

Nice video! Just curious, why not paint with cocoa butter?

Depends on your method for melting! Plastic for microwave, stainless steel for double boiler 🙂🙂
