Im from Mexico and the type of quesadilla you’re making it actually exists as a ‘sister plate’ of the quesadilla and it is called sincronizada 😉

I can not describe how happy I am now because of these recipes that you’ve made simple to understand and fun to watch. I tried the first one and so far I love it.
I felt depressed about eating the same things everyday as a vegan art student. Now I feel encouraged to step out my comfort zone and find interesting recipients and cook delicious vegan foods everyday instead of eating kebab or cooking food that I don’t enjoy! Love you

I live in a predominately Hispanic part of the US. We tend to make quesadillas with flour tortillas around here, so you are in good company. As for whether we fold it or stack tortillas on top of each other, it kinda varies from person to person.

I'm an American of Mexican descent...my mother would make it with both flour and corn tortillas. We only folded it if we didn't want to eat too much flour tortillas, since they are usually bigger than the corn. But when eating corn, we use two corn tortillas, since they are smaller. You're right, do what you like in your home with what you have available. :D Great job on your quesadillas.

Mexican here. I can only speak for *most* mexicans who live in Mexico City (where I live), but most of us really only eat quesadillas with corn tortillas when they’re bought out (i.e. street food), but homemade quesadillas are usually made with wheat flour tortillas! Also, sometimes we fold 1 tortilla in half, some other times we use two tortillas like you did, and, as someone already pointed out, we call those sincronizadas (as in synchronized, just like how the tortillas would be “synchronized” to each other)

I’m Chicana (born in the USA from Mexican immigrant parents) and we make quesadillas both ways just depending on preference at the time. If I only have small tortillas but want a bigger quesadilla I put the stuffing on one tortilla them top it with another. Tonight though, I had potato stuff ones where I just folded them in half and fried them.

If you go to a restaurant the quesadillas are always stacked tortillas and cut into wedges but I think the more traditional way is folded. I am half Mexican and grew up eating them. They were just cheese melted in a folded tortilla on a cast iron skillet. Maybe some hot sauce. They are one of my favorite breakfasts.

Cheeze recommendation: vegan Mexicana. Melts and stretches like nothing else!! Only available at Asda, though. Another good melting cheeze is the ?Tesco free-from 'halloumi' which doesn't really taste like halloumi at all, but because of its tougher texture, it is an amazing mozzarella substitute for pizzas and toasties etc.!
