Have you guys ever tried making cracker dough? It takes 2 days to make. It ferments for two days. It comes out super airy and flaky. Drop some corn meal on the griddle..it basically suspends your pizza/calzone above the surface giving it the perfect crunch. In California, Me n Ed's pizza and Shakeys use this dough. Me N Ed's uses the corn meal with a traditional brick over while Shakeys uses a Spiral air oven. Ever since I subscribed to this channel, I geek out on food.

when stretching out dough, what I do is what I learned at a pizza shop I used to work at. before the dough rises its best to separate the dough balls for each pizza on a tray 3-4 inches apart with a little oil on top and covered in plastic wrap and set aside to rise. after the dough is done rising, place the dough "ball" on a flowered or cornmeal surface, take the bottom part of your hands and push the dough out one hand wax the other wax off so you push the dough out in separate direction and rotate the dough in this motion. (you can do this to stretch out the entirety of the dough) but if you want to do it the "pizzeria" way, after it is spread out enough to fit both your fists, this is where you stretch out the dough the rest of the way. flour both fists, and the motion I was told is "Fist around the wrist" you take your dominant hand and pull out and down a couple inches, then take your non dominant hand and slide it under your dominant hand, then move out and down again. the dough should roll around your fists increasing in size as you go. another way is to roll both your wrists as you pull , it does the same thing but can be a bit tricky to get the knack of.
I love the versatility of the griddle!! Can’t wait to get mine. The only thing I would do different is do a olive oil garlic sauce inside and dip my calzone into the red sauce. Happy Griddling!!!

Here's another comment for the algorithm to add some advice for calzones. Use less sauce (some people even use no sauce) and more cheese. They still came out great either way!

Happy New Year!!! Love the new sign! Calzones and pizza may be on the top of my favorite foods, so definitely a good way to start 2021! Even though you didn't stuff them like crazy, they looked really good. It actually probably made them easier to cook on both sides, because calzones are never actually flipped. A store called WinCo near us makes them fresh to cook at home, and they are packed full of goodies (like when I say packed, I mean enough pepperoni for a 28" pizza packed. I usually just made them at home until WinCo, but it's just easier to let them make 'em. Anyway, Calzones aren't supposed to have tomato sauce inside, you just dunk them in marinara; but I am with you guys, I love sauce, so inside sounds good to me. I love how pizza sauce and cheese melt together too, and you can't get that without sauce inside. So any inside sauce haters out there can just zip it! Griddle on!

Great video 😊. Love the instruction. I don't know if anyone has said this, but it helps if you make sure that your sauce isn't too close to the edge when you're pinching it closed. If it is the edge doesn't seal properly, and your cheese and other stuffing can come out. Also as much as I love Hawaiian pizza, it doesn't translate well to calzone. The pineapple has too much juice and tends make it soggy.
Calzones are normally baked in a pizza over, not fried. Calzones usually are loaded with ricotta cheese too. You should have tried making one of them in the Air Fryer and compare them both. Calzone Lover....

Nice! I would suggest less sauce (dip it in sauce later) , more filler ingredients + low moisture (moisture is the enemy here) ricotta cheese, more garlic, basil, oregano, parmesan/asiago cheese and a light dusting of cornmeal for the griddle part. Secondly, as they firm up enough chuck them in the air fryer to get the side dough cooked more evenly.

Just a suggestion. Pack it with a lot more meet and cheese. Don’t put a lot of veggies in it and leave out the pizza sauce. This will allow the bread to cook faster and won’t get soggy. Use the pizza sauce on the side for dipping.

Publix dough is hard to work with. Full of gluten. Very simple to make your own pizza dough. 500g 00 flour 280g water Instant yeast 3/4 tsp Salt to taste Kitchenaid mixer with dough hook for 7-8 mins on level 2 Cut into 3 dough balls and put in Tupperware overnight. Let warm to room temp prior to using. Good luck.

Here's another comment for the algorithm to add some advice for calzones. Use less sauce (some people even use no sauce) and more cheese. They still came out great either way!

Happy New Year!!! Love the new sign! Calzones and pizza may be on the top of my favorite foods, so definitely a good way to start 2021! Even though you didn't stuff them like crazy, they looked really good. It actually probably made them easier to cook on both sides, because calzones are never actually flipped. A store called WinCo near us makes them fresh to cook at home, and they are packed full of goodies (like when I say packed, I mean enough pepperoni for a 28" pizza packed. I usually just made them at home until WinCo, but it's just easier to let them make 'em. Anyway, Calzones aren't supposed to have tomato sauce inside, you just dunk them in marinara; but I am with you guys, I love sauce, so inside sounds good to me. I love how pizza sauce and cheese melt together too, and you can't get that without sauce inside. So any inside sauce haters out there can just zip it! Griddle on!

When your dough reaches n internal temperature of 190F-210F it's done. These look yummy.
Great video 😊. Love the instruction. I don't know if anyone has said this, but it helps if you make sure that your sauce isn't too close to the edge when you're pinching it closed. If it is the edge doesn't seal properly, and your cheese and other stuffing can come out. Also as much as I love Hawaiian pizza, it doesn't translate well to calzone. The pineapple has too much juice and tends make it soggy.

Calzones are normally baked in a pizza over, not fried.
Calzones usually are loaded with ricotta cheese too.
You should have tried making one of them in the Air Fryer and compare them both.

Nice! I would suggest less sauce (dip it in sauce later) , more filler ingredients + low moisture (moisture is the enemy here) ricotta cheese, more garlic, basil, oregano, parmesan/asiago cheese and a light dusting of cornmeal for the griddle part. Secondly, as they firm up enough chuck them in the air fryer to get the side dough cooked more evenly.

Looks great! Just got a Blackstone for Christmas and am loving it so far. Just curious, you were worried about the sides not cooking. Could you have pushed the calzone against the edge of the griddle to get it to brown some?

Just a suggestion. Pack it with a lot more meet and cheese. Don’t put a lot of veggies in it and leave out the pizza sauce. This will allow the bread to cook faster and won’t get soggy. Use the pizza sauce on the side for dipping.

Calzone... the taco of pizza
Haha!! It’s seriously like you were here during filming!! We kept calling it the “taco,” “empanada” - and any other ethic dish from other countries!🤣🤣
Publix dough is hard to work with. Full of gluten. Very simple to make your own pizza dough.
500g 00 flour
280g water
Instant yeast 3/4 tsp
Salt to taste
Kitchenaid mixer with dough hook for 7-8 mins on level 2
Cut into 3 dough balls and put in Tupperware overnight. Let warm to room temp prior to using.
