- Making a calzone or stromboli we all love isn't as hard as it has to be.
This video shows the 'roll' method and the 'fold' method for strombolis, and a fancy way to make a wonderful 'folded pizza' or calzone!
PS - Bake at 475 until browned to your liking! Note that if you stretch your dough too thin it could take VERY long to get the browning you enjoy.

I think you did good with the demonstration. Thank you. I have never made calzone before (i guess its not where my family is from in Italy) but we do make Stromboli & pizza. My question is where do i put the sauce in the calzone? Is it added right after the basil? My daughter went to Italy a few years back & never stops raving about the calzone's there. As a matter of fact my relatives that took her traveling about said she was going to turn into a calzone 😂😂 thats how much she ordered it (she was there for almost 2 months) when she wasn't going to different regions she stayed with aunts & cousins in their homes (which she ate pasta daily & would call complaining 😂) She didn't realize pasta was always included daily 🤣 Anyway i would love to make her a calzone as a surprise.
You can put anything you want, alot of times in Italy they put some sauce on top before bake, NY style like this is served with a marinara sauce on the side :)

definitely trying this soon. the calzone in the picture in the beginning of the video looks exactly like the one from my favorite pizza place in town. i'd love to replicate it or at least get as close as possible. do you brush the outside with oil or butter before putting in the oven? or just raw dog like in the video? haha

I recommend 475 for about 9-10 minutes, but check and make sure it looks done to your liking!

6 or 1 per 100g water used :) just like for small pizza!

This is a classic NY style dough, ~55-60% hydration, 2% salt, 2% sugar, 2% olive oil.
48-hour cold fermentation with hi-gluten flour :)
I always order Stromboli from our favorite local pizza place Eddy’s. It’s delicious! The thing is that it always comes in a beautiful puffy half moon shape buttered crust with sauce on the side. Are there any other differences between Stromboli and Calzone besides the shape? Eddy and his family have been at this for quite a while, just wondering if maybe there are different regional definitions for Stromboli vs Calzone.
Absolutely! The strombolis and calzones shown are simply what I've been taught over the years but between Italy and the Northeastern US you will plenty of different versions :)

These are 260g/9 oz but you can make any size calzone you want!

I have made too may Calzones,you know why? When I launch a Pizza and it gets stuck on the peel half way into the oven,you’ve got to think quick and save the meal! I bet Calzone means ah SCHISST in Italian. LOL
