    That's a great idea for left overs! I usually put them in a stew, but after watching this, a pie is on the menu after this weekends smoke up if there's any left over.

    As always love your work mate. Have you thought about swapping out the peas carrot and corn for some beans or tomato with the seeds removed? Or even some brown rice. Or a combo of them all..

    Any reason why you couldn’t do this in a cast iron skillet? If so do you think the pre-bake of the bottom crust is necessary for a cast iron version?

      No reason at all, I think if the skillet was hot you could put the pastry in without blind baking it. If cold I would still blind bake it, it’s really so the pastry can get a crust and not stay soggy from the mixture.
