- How to make Pork with Vinegar or Paksiw na Baboy
INGREDIENTS
1.5 kg Pork belly,
1 medium onion, chopped
5 cloves garlic, crushed
1 tbsp ginger, chopped
1 tbsp whole peppercorn
Salt to taste
4 dried bay leaves
1/2 cup vinegar or to taste
1 tbsp sugar or to taste
2 liters of water
DIRECTION
1. Bring the water to a boil, add the pork. Once it boils, remove the saucepan from the heat and discard the water. This is to remove the slimy smell from the pork and reduce fat.
2. Return the pork to the saucepan., Pour 2 liters of water. Boil for 15 minutes over medium-high heat.
3. Add the onion, garlic, ginger, peppercorn, salt, and bay leaves, Stir to mix and cook for about 30 minutes over medium heat.
4. Add vinegar and sugar. Stir and simmer until pork is tender.
5.Serve over rice.
