Pork Sinigang- Boiling is the traditional way. Boil the pork with cubed/sliced onions. Add a little salt and cook on medium heat until pork is tender. Add more water, seasonings, labanos (radish), and gabi (edoes). Cook for about 5-10 minutes then add sliced eggplant/aubergines, okra, 4-5 medium ripe tomatoes. Continue cooking for a further few minutes. Add kangkong and sampaloc nearing end of cooking time or once all vegetables are nearly cooked. There should be a lot of liquid or sabaw. Add more seasoning or sampaloc as preferred. There are milkfish and/or prawns version of sinigang BUT none required garlic so no, not needed. Thanks for putting Filipino cuisine online.😊

My Lola’s way of cooking sinigang is the old or traditional way…. No gisa gisa…. But she put the chopped tomatoes and onions in the pan… lagyan ng asin at lamasin… durugin sa paglamas to extract juices. Lagyan ng konting tubig… just enough to submerge the tomatoes and onions. Boil to extract more juices… then add more water. When it boils again, add the proteins… beef, pork, fish or shrimp (sa isda at hipon, puede lagyan ng luya)! And the rest of the procedure is traditional… add vegetables… hard ones first… soft ones follows! Voilá…. Kainan na….. dagdagan ang sinaing!!!

Mas better before you cook the meat banlian ng boiled water for about 30 sec bawas amoy at dumi then proceed cooking at before ilagay pang asim remove set aside the veg para green at fresh pa tingnan
i used to cook my sinigang this way before. I went back to the traditional way when i learned about the harmful effects of consuming synthetic oil in our body and you cannot remove the scum this way. Mas mabilis din makaumay pag may synthetic oil.

Looks good but I would omit the garlic, as it is not really part of the sinigang taste. We do this with fish, sinigang sa miso. Saute first before adding fish and then water and souring agent. Thanks for sharing!
I sangag the meat with onion, garlic and toms using no oil and until tanggal lansa and becomes brown... add water, boil until meat becomes so tender... sampalok mix, miso and veggies and siling pansigang...

I cooked the pork in a pressure cooker. Then igigisa ko na at lalagyan na ng vegetables at seasonings. Nilalagyan ko rin ng lemongrass. So refreshing!❤

Same ng process ko pinapabrown ko pa nga ng konte yung pork. For me there's nothing wrong if you add garlic mag add pa nga sya ng iba flavor distinct di ba. Yung iba nga baka di na malasahan na may garlic yung sinigang. Uso naman ngayon ang lumalayo sya traditional way of cooking

By cooking the veggies with the broth, your making the veggies soggy from too much heat.. You can blanch the soft veggies then include them before serving.. While the harder veggies stays in the broth until softer then remove from broth & include them before serving.. This way the textures of the veggies are just right.. Also, you can boil the pork first to tenderize then add them to saute.. Notice you keep checking if meat is tender during the boil..

Kanya knya tyo ng way sa pgluto ng cnigang, no need to put camatis or igisa gisa pa, ms better yung simple cook boil nlng with gabi,kangkong,puso ng saging and chili png sigang and sampaloc...yun ang dabest

By cooking the veggies with the broth, your making the veggies soggy from too much heat.. You can blanch the soft veggies then include them before serving.. While the harder veggies stays in the broth until softer then remove from broth & include them before serving.. This way the textures of the veggies are just right.. Also, you can boil the pork first to tenderize then add them to saute.. Notice you keep checking if meat is tender during the boil..
