- A rhubarb cake recipe that is so juicy: rhubarb cake with sour cream! This is by far the juiciest rhubarb cake that I know and that I would like to introduce to you today.
Baking rhubarb cake is a must in spring. Fresh rhubarb and fresh sour cream is a combination that is ultimately delicious. Fresh and juicy. This is a rhubarb cake for real connoisseurs.
Rhubarb cake with sour cream
Rhubarb Cake Recipe
Ingredients for a large, high-sided baking sheet
(14 inch * 16.5 inch * 2 inch)
(for smaller baking sheets, please scroll down)
For covering:
- 4 lbs. rhubarb (cleaned and cut 3 lbs.)
- 22 oz. of sour cream
- 6 2/3 fl.oz. of cream
- 2 2/3 oz. of sugar
- 3 eggs
- 2 packets of vanilla sugar (2/3 oz.)
- The peel of an organic lemon
For the dough:
- 5 oz. of butter
- 14.5 oz. of wheat flour
- 2 heaped teaspoons of baking soda
- 6 oz. of sugar
- 2 eggs
- 7 oz. of sour cream
- 1 fl.oz. of milk
Ingredients for smaller, low-sided baking sheets:
For covering:
- 3 lbs. rhubarb (cleaned and cut 2.3 lbs.)
- 14 oz. of sour cream
- 6 2/3 fl.oz. cream
- 2.5 oz. of sugar
- 2 eggs
- 2 packets of vanilla sugar (2/3 oz.)
- The peel of an organic lemon
For the dough:
- 3.5 oz. of butter
- 11 oz. of flour
- 2 teaspoons of baking powder
- 4.5 oz. of sugar
- 2 eggs
- 6.5 oz. of sour cream
Baking time: 60 Minutes at 350°F.

Solange man nicht vergisst, den Herd auszuschalten ... 🤭 Aber ich vergesse gerne mal, irgendwelche Zutaten zuzugeben. Fällt mir dann immer auf, wenn das Rezept fertig ist und ich beim Zusammenräumen noch das ein und andere finde, was ich vorbereitet habe und eigentlich mit rein sollte ... 😅 Fällt aber meistens gar nicht auf. 😄
