I am working at a restaurant and yes, something like this isn't so far from reality, because we always take more reservations in than we seat. Why? Because a lot of people don't stay as long as their tabels are reserved. Tge problem:Sometimes people with reservations have to wait like 15 min to get their table. And because no one really knows how many people they can guarantee a table everyone gives a different answer and sometimes or chef tells uns to say, that we do not let anyone else in, because we are full, but then he does it. That's confusing and I kinda feel stupid witnessing it and sometimes even with the customers right in front of us, after for example I told them that there is no table without a reservation. 🤷

That's not doing her job properly, though. Restaurants take reservations for certain times so those seats aren't taken by people arriving at that time. If the seats are open and you have the capacity to take a "right now" reservation, you should have just seated them.
I remember at Cheescake factory sometimes the servers wouldn’t be clocked in yet so their section and tables were closed and people would get so mad because they couldn’t sit there yet… sometimes they would just have to wait 10 minutes if the other servers were busy but usually we made reservations seat first.
You can tell when people haven’t worked in the service industry. Just because a table is empty doesn’t mean it’s available. You can’t disrupt the flo, if you over seat the kitchen will fall behind, the servers will get overwhelmed and the bar will struggle to keep up with drinks. Not to mention at prime meal times like 6pm a lot of times u have like 10 reservations coming in all at once, ain’t no way u r taking a walk-in.

Hey, waitress here. Most of the time the reason why this happens is because there arent enough servers or there are enough scheduled but they are all stressed out or at their max or they do have a lot of reservations scheduled in the next 30~ish minutes. Usually its a combo of 2 of these 3 things. The hostesses job is to seat people yes, but also (especially in high end restaurants) make sure the servers are not spread too thin and are able to give good service. The reason why in a lot of cases you can go online and book a reservation for right now even though the hostess told you there is a wait is because the owner of the resturant doesn't care about the stress levels of their employees, only making money, and they will create more reservation slots than what are physically able to be seated assuming some wont come in (just like airlines do with plane tickets).

The receptionist said oh sorry you need to call for reservation before you can have a haircut. And for now we are fully booked. I told the receptionist, you are fully booked and all you guys are not even doing one person. Theres no customer in here and yet you are fully booked. Look around theres no one!!! And the receptionist looked around and said ok take a sit. Then somebody came and do my haircut. Until my haircut was done, there is literally no customers who came in.

I don't run a restaurant but i do take reservations. Had a guy come in. Told him we were booked. No room. He turns around, goes on my website and books an open online reservation for 90 minutes prior. He turns back around and says "im here for my reservation. Im running late." I told him to get out.
I can’t tell you how many times I’ve run into this situation. People walk in and see an empty restaurant and I tell them I’m booked and then they throw a fit. However, the problem is I can’t guarantee you will get up and when that person gets there at 745 they will throw a bigger fit if I don’t have the table they called for. If you try and be nice and accommodate them it always ends up biting you bc people like this actually don’t care about anyone else. The people who are nice are the ones that you tell them you are book and they take it in stride. Best just to tell them no.
That’s an easy fix actually. I would just tell people they could stay until 20 min before the booked table and will come remind them when time is up. If they agree then I would seat them. If not they’d leave. I mean - it’s not that hard lol

The food must be made if they sit down and take a long time to order or order more than one course you might be screwed because the kitchen can't make it fast enoth. If they order a steak which has to rest they might still be eating when the people who reserved the table arrive. You also don't know how fast they eat they might be sitting there and take 30 mins to eat their meal and you can't just make people leave who are still eating. Then you also need to get the table ready for the next people. You can't control what happens between now and when the next people arrive. It's just too much of a hassle. It's just best to serve the people who reserve before you take walk ins. The people who make the effort to reserve a table deserve everything to be flawless when they arrive, else they would wonder why even bother to reserve.
As someone who deals with situations like this it is better to have one problem than two problems. Tell them yes you have 2 problems, tell them no you only have 1 problem.

@@SonicLamb it's really small tho. every other place I worked was all about getting as many people in and out as possible and overworking and overstressing the servers and chefs. this one has one chef, the owner, and each table is given about a 2hr window to eat. it's supposed to be slow. with a small amount of tables, it makes more sense to take the reservations and allow walk-ins if there aren't any reservations

okay as a hostess at a small pricey restaurant, people always do this. they walk in at 6:30 on a Friday or Saturday and then get mad when we don't have a table. they use the line that there are open tables, but they are all reserved for the whole night. and sorry you're not gonna eat in 30 mins before they show up

A smart restaurant would have a section of tables that can't be reserved, and is for walk-in customers.
@@SonicLamb it's really small tho. every other place I worked was all about getting as many people in and out as possible and overworking and overstressing the servers and chefs. this one has one chef, the owner, and each table is given about a 2hr window to eat. it's supposed to be slow. with a small amount of tables, it makes more sense to take the reservations and allow walk-ins if there aren't any reservations
