Cool videos. This channel deserves more views. Don't often make chilaquiles as often because I prefer simple enchiladas. Using a variety of peppers (puya, ancho, guajillo, chipotle, pasilla, etc) gives the best flavor. The chilaquiles you made possess an amazing color. Good stuff.

I commented a dish, this looks amazing, I think I can split up easy, heat wise, can take some sauce like you said but make mild, have 1+2 cup freezer containers so make spicy hot, and just little heat, always prepare both anyway so this is great.
