My Favorite Pregnancy Meals! || Specific Carbohydrate Diet -- Gluten Free and High Protein!

  • These are some of my favorite pregnancy meals! Nutrition during pregnancy is SO IMPORTANT for the development of your baby! From calcium to protein, iron to folate, to choline and fiber -- these meals are nutrient POWERHOUSES!
    And they're all totally delicious!
    And did I mention they're on the Specific Carbohydrate Diet? That's right! These gluten free, sugar free meals are have kept my Ulcerative Colitis in remission for over 15 years! (Symptom and medication free!)

    Recipes:
    Pad Thai: beautybeyondbo...

    Cheesy Scramblers:
    2 eggs
    1/4 cup freshly shredded cheese (cheddar, havarti or swiss)
    handful of spinach
    salt, pepper, olive oil
    Ants on a Log:
    Celery, peanut butter, chopped dates
    Turkey Burgers:
    1 lb ground turkey
    1 egg, beaten
    3 garlic cloves, minced
    1 Tbsp Mayonnaise (see SCD brand below)
    1 Tbsp Dijon mustard
    1 tsp salt
    1/2 tsp freshly ground black pepper
    Directions: Mix together with gloved-hands. Form into 4 patties. Cook in a large nonstick skillet in 2 Tbsp EVOO over medium heat for 3.5 minutes per side, until the interior temperature reaches 165 degrees F. Serve with ketchup (see SCD brand below), dijon, pickles (see SCD brand below), tomato slices and cheese in lettuce wraps!

    (Use grass-fed ground beef instead of turkey)
    Cauliflower Fried Rice:

    (Substitute organic ground turkey for the shrimp; omit the seafood)
    Pesto Pasta:

    (SCD do not omit Parmesan; May use shrimp instead of scallops and Wellbee's Lentil Pasta instead of zucchini noodles)
    "Better than Sweetgreen" Bowls: (a "no recipe" recipe)
    -1/2 cup cooked wild/brown rice (SCD use cauliflower rice)
    -1/4 cup chopped romaine lettuce
    -1 portion of protein of choice (salmon, ground turkey, chopped/shredded chicken breast, etc.)
    -Roasted Veggies of choice (chopped brussels sprouts & red onion; carrots with red onion; beets) -- roast at 400 degrees for 25 minutes in olive oil, salt, pepper, garlic powder, onion powder and red pepper flakes)
    -Pesto sauce: 2 cups fresh basil, 2 garlic cloves, 1/4 cup pine nuts, squeeze of lemon, 1/4 cup parmesan cheese, salt and pepper, 1/4 cup olive oil -- blend in food processor
    Cauliflower Pizza:

    (SCD: use havarti cheese, parmesan &/or swiss cheese; Add 1/4 cup cauliflower to the crust)
    Grass-Fed Bolognese:

    Salmon Glaze:
    2 Tbsp Dijon mustard, 1 Tsp raw honey, 2 garlic cloves, minced -- mix and brush on salmon filets before cooking at 400 degrees for 13-14 minutes until internal temperature reaches 145.

    Banana Ice Cream:

    Roasted Lima Beans:
    Soak 1 cup dry lima beans in a large bowl of water for at least 12 hours. Discard water. Boil for 40 minutes. Drain. Let dry. Toss with olive oil, salt, pepper and garlic powder and bake on a parchment-lined baking sheet in a single layer for 25-30 minutes at 400 degrees. Eat immediately.
