People fixate often on the reference to Stannis as iron: cold, hard and inflexible. But one of the quirks of iron is that when it goes through fire and you beat the hell out of it, it becomes steel. To me that seems to be Stannis' character arc in a nut shell: this tough almost brutal man being forced to face the fact that the world doesn't bend, and changing for the better, but only after losing so much.
It seems like Stannis and Renly are the opposite on that front. Stannis is gravely dutybound and can't see the joy in life, while that's all Renly can see is joy and none of the duty. Robert was the true steel in that regard, duty, honor, and plenty of joy and merriment(though too much, later in life)

In the book the "And for Renly" is actually asked as a question by Davos. However, I think the speech is better if you read it as if Stannis himself said it, as in this reading. Makes a lot less sense however, as Stannis is the one who killed him.

I do wonder how much of it you could add in the last conversation between him and Brienne, and how much people would be torn about this softening him vs keeping the hardness the show had given him. It seems like it got the early seasons narratives about power nailed and would be comparable to Cerci's speech about lying on the ground pulling up weeds, while also showing where Stannis' hard edge comes from. I also wonder if it would change Brienne's resolve in 'doing her duty' and make not showing his death even more of a talking point.
Such a missed opportunity to leave this out of the show.. but alas the writing soon started deteriorate to turn to fart and eunich jokes.. I wish he had said something about the peach in his last moments.
Within the next decade either we will have the end of ASOIAF or GRRM will be too old to write it. At that point GRRM's chosen author will write the remaining story. Whatever happens in this decade we shall have the ending.
I love Martin's ability to make every character very HUMAN. I love Stannis as a character, and as a middle child, I feel his pain. He is not the greatest, not the most charismatic either... Always trying to prove his value, trying hard to be loved and it is his very ruin.
