Ramsay has a history of cultural appropriation, doing "his take" on classics and trying to make out that his is somehow better. He got absolutely served here and it was a long time coming.

Here's what I learned from reading David Thompson's book. Western food is based on portraying the flavor of the main ingredient, typically by cutting down the amount of ingredients or avoiding any overpowering flavoring. Thai food on the other hand uses a lot of very intense ingredients to achieve a delicate balance of flavors that define what that dish is supposed to taste like. The chef uses the words "sweet, sour and salty", so the balance of the flavoring agents (tamarind, fish sauce, sugar) is off, which means it's not pad thai. A western cook might think it's pad thai because the main ingredients (noodles, shrimp, bean sprouts etc) are there, but that's not what defines the dish.

Assuming that OP's comments are accurate, it's probably just a reflection of the degree of importance that each culture places on ingredients vs flavour. Eg: you can change the noodles, the type of sugar, and use different pastes, it will be Pad Thai so long as you achieve a similar balance of flavour and texture. On the other hand, traditional Western approach to cooking are more strict about the ingredients -- they'd care about whether there's egg or peanuts, or the type of noodles used.
The fact that this clip exists makes me feel that Ramsey is not ashamed of failure or afraid of humiliation, unlike other celebs. He is always learning, more to him

Gordon Ramsay is one of the GOAT Chef. Even he's known for his criticisms, he still acknowledge other Chef's criticisms towards the dishes he cook.
Here's what I learned from reading David Thompson's book. Western food is based on portraying the flavor of the main ingredient, typically by cutting down the amount of ingredients or avoiding any overpowering flavoring. Thai food on the other hand uses a lot of very intense ingredients to achieve a delicate balance of flavors that define what that dish is supposed to taste like. The chef uses the words "sweet, sour and salty", so the balance of the flavoring agents (tamarind, fish sauce, sugar) is off, which means it's not pad thai. A western cook might think it's pad thai because the main ingredients (noodles, shrimp, bean sprouts etc) are there, but that's not what defines the dish.

Assuming that OP's comments are accurate, it's probably just a reflection of the degree of importance that each culture places on ingredients vs flavour. Eg: you can change the noodles, the type of sugar, and use different pastes, it will be Pad Thai so long as you achieve a similar balance of flavour and texture. On the other hand, traditional Western approach to cooking are more strict about the ingredients -- they'd care about whether there's egg or peanuts, or the type of noodles used.
