Question…. How can I key out the black and white keys of a piano keyboard and keep hands only in a video of hands playing a piano?
You'd have to mask and track the hands and separately mask out the keys. That's most definitely NOT a noob tutorial.

I have a white balance circular card that is 18% gray with white target symbol in the center. I would click the dropper on the white line of the target symbol?
Their is a deeper conversation about when and where to reference each. White is the most common marker point
Also, can I just hold up a picture of a specific shade of Gray on my phone instead of buying that gray card?
You can buy a true white/grey balance card for under $10.

One thing I've wondered is if it is compulsory to have your footage properly white balanced or what if I just like my footage looking like that, isn't that okay?
Great question! No, there is no 'rule" that your footage needs to be white balanced, especially if you're an intermediate or advanced videographer who has spent lots of time building a lighting design to capture a specific look.
White balance is designed to make sure most general shots have a true point of reference for color correction.
Most creators I know don't own a montior calibration tool to even understand if what they are seeing are the correct colors in their footage.
So it's a tool to help find center.
Daniel, What if you don't have a reference card?
You could use something like a white piece of paper but they aren't necessarily balanced for true white. I'd suggest picking up a true white/grey balance reference. This is the one I use most often and it's under $10 ➡️ amzn.to/3V2zyH1
