    Watching you make this flavor is what made me pick up the hobby. Another month and mine should be done too, tho I will say after tasting I might have went overboard with the cloves but hopefully stabilizing and sweetening should fix it.

    I had some left over stuff from the holidays, mainly cranberry, added a whole bag of cranberry and then I have had some cinnamon sticks that were going to out of date soon so I tossed them in there.... Didn't realize that it was 5 sticks to my 1 gal..... So I have some red cinnamon mead lol.

    I don't know if you're aware of this or not but there are apples that are red flesh on the inside and some of them taste like starburst custard it's f****** amazing and life-changing I can only imagine what the wine would be like from said apples.

    I watch this but I don’t ever think im make a wine I don’t drink alcohol but I enjoy seeing the fermentation process it’s all very calculated and natural most i made was a ginger beer but that has almost no alcohol more like a fizzy pop drink not even a cider

      Give it 24 hours if you're using potassium metabisulfite and sodium metabisulfite (aka campden tablets).
      All other stabilizing methods will vary.

      Absolutely possible. You'd have to check the jam though. Some ingredients in professional production might make fermentation a whole lot harder. If you have home made jams, go crazy. You just need the right amount of sugar for your desired alcohol concentration. How that is supplied is more or less irrelevant. In Finland they make cheap booze by fermenting sugar water.

    I made a spiced apple wine this year. I often put a tiny amount of pepper in an apple pie, so I did the same in the wine. 3 peppercorns in a gallon. Now it's apple pepper wine. Not great, but okay.

      Camden tablets. But stabilizing isn't all that necessary. You can even low temp pasteurize your brews, so you don't have to add anything

    How do you get rid of the yeasty flavor? Every time I make hard cider or apple wine the yeasty flavor takes months to dissipate. It only happens when I ferment apples

      It fermented for 40 days you stabilized and sweetened it and then you aged it for 4 months it didn't ferment for 6 months

      A winery does everything perfectly. Usually the grapes and the resulting mash is analyzed and exact amounts of ingredients are added. Everything is temp controlled and all of that good stuff. Home brewers can't provide that kind of perfection. Less perfection will result in more time

      ​@@medmark77our homemade wine is never that fast. Home usually takes more time, we aren't as exact with our measurements as they would be at a winery and we don't temperature control the wine. In a winery they will be very exact and will keep the wine at the exact ideal temperature to speed up fermentation, this is good for a larger scale and a business since you will get perfectly predictable results every time but for someone just making some at home it's overkill

      I guess you're from the US and cider is just more natural apple juice for you? It doesn't change anything except the looks. Cider is extremely hard to filter to crystal clear without the use of professional grade equipment. Otherwise it has better properties than the cleared stuff, as it comes with lots of extra ingredients for the yeast to feed on.

      Bread yeast has a lower alcohol tolerance (5-8%) than wine yeast. So it might stop fermenting before finishing the sugar, leaving you whit a too sweet brew. But if you adjust the sugar amount accordingly, you can use it.

    Does it hurt the mead to transfer from jug to jug to much? Seeing the yeast at the bottom, I wanted to move it to a clean jug about every 30 days. Wasn't sure if this would hurt the product.

      You just shouldn't get too much oxygen into the brew. It can lead to a more or less delicious vinegar instead of a mead. But if you siphon it without too much of a drop height, you're usually fine. The dead yeast doesn't do much though. It just isn't suspended anymore, but can provide nutrient to the living yeast. That's why most people only do first and secondary fermentation and bottle it afterwards. So a max of 3 containers.

    I have a question when it comes to fermenting. Do you add all yeast and nutrients at the beginning, or do you add over the course of fermentation? I've been told both answers

      Depends if your wine needs to be step fed nutrients. Higher abv usually needs to be added gradually throughout a schedule. Like if you have a fresh pressed juice you could throw some k meta and wait 24 hours to pitch the yeast

      Of course. Just don't ferment it dry, or add something sweet afterward. Just make sure you stabilize or it'll ferment more and generate pressure.

    So I’m trying to understand the Fernando do I mix it with the yeast before adding or add it halfway through the fermentation process?

      Fermaid-O. Just a nutrient. Usually you mix it in before the yeast so you can get it dissolved nicely while dissolving the honey. But if you forgot, you can add it later as well. You don't even have to use it. Some people use boiled bakers yeast in water or leave it out completely. It just makes starting the fermentation a lot easier and provides a fail-safe. If your brew is stalling, you can also add it later on to see if the yeast is just missing a bit of food. Just don't overthink it. The process worked for thousands of years, it won't stop because you didn't pick the right time for the nutrient.

    You should 100% try this: Make a regular, control, unflavored batch of mead, but use agave nectar instead of honey.

      The one you like most. In general a mix of tart and sweet will produce the most complex flavor. You can use different kinds of apples though. Just mix and match the apples you enjoy eating

    Friend of mine made this and he quoted 20% so is this even possible because the mead he gave me was awesome but packed a punch.
