Lyssa Marie I don’t think it’s messed up. I guess they just introduce them as “This Chef” in order to recognize that they’re a chef so those don’t have worry about it or something like that. And also, it’s blatant that they don’t just call these people “This Chef” as just their identity in the workplace, along with their names being told or shown in the screen to have another reference. As well their names are clearly displayed all around this comment section, example being Rie. But that’s just me.

I would presume it's because nobody thinks of drinking mirin straight. It's for cooking, ya know? Also it's more expensive than comparable alcohol, so if you're looking to get drunk, it's a poor choice.

The thing I like the most about these recipes is how Rie buys bottles of sth every time (sriracha, rice vinegar, fish sauce etc.) just to use a bit, it reminds me of my tries of making sth fancy, using a splash of any sauce and just forgetting about the bottle

Rie love your shows, I am an Executive Chef working in time square, during one Xmas season (Crazy Busy) I was making 20 gallons of cajun corn chowder for the day along with 10 other Items at the same time, I accidentally dropped 3 large cans of tuns which I had in a bowl for salad, into the Soup which I just Finished, You can only imagine all the curse words 9am service in 2 hours PANIC. Mixed it up for the hell of it. Brilliant combo & 20 years later still a regular on the menu.
