I also watched the ginger beer video which I never tried, but now I will. The pepperpot and garlic pork videos were excellent approaches, although I made some of those before. @@RealNiceGuyana yes man, raisins. Your videos are great. Tip, if the pumpkin/butternut squash is hard to peel, stick it in the microwave for 2 mins and it will peel like a banana...well, maybe not so easy, but easier nonetheless.
These have to be boiled , for the specified amount of time in order for it to become as solid as it is at the end. I don't think steaming would work for this.

Blackpepper gives it a nice flavour! Whenever I'm making anything sweet I must add a pinch of salt to it and anything savory I add a pinch of sugar. When I'm making Chocolate cake, Banana bread or Brownies, I always add some blackpepper and a pinch of salt to it; it brings out the flavour; I've been doing this for almost 40 years! My Conkie/Paime ingredients are usually cornmeal, coconut, pumpkin, butter, evaporated milk, condensed milk, brown sugar, raisins, blackpepper, a pinch of salt, vanilla, cinnamon and nutmeg. I love them, they're very moist and delicious plus the spices add to the flavour!

I think the cooking is good, but you should give more details on weight or portion of your ingredients, the pone looks good, but how much of each items you used. Keep it up.
All the ingredients and measurements are listed below the video ( just click on "more" The only thing which a weight was not provided for was the pumpkin and that is not that important, just use a piece about the size we used . It does not have to be exact.

In Barbados we don't add pepper or tie the banana leaves. We place the banana shanks in the bottom of the pot with water so that the conkies steam more than cook.
sonia sandiford yes the steamed is better . it keeps the flavors Trini steam too , but we don't use black pepper, we would use a lot of spices and reasons, nutmegs
Real Nice Guyana I made it today, came out so perfect!! 😍😍😍 Thank you guys! I used the orange colored “calabaza” instead of the green skinned pumpkin and bought the banana leaves from the freezer section at the local Food World Supermarket (NYC). I recently obtained a seated coconut grater (a literal pain in the butt!) so I used that to grate my coconut! 😍😍 The whole thing was authentic, haven’t had it in 10+ years, thanks again!

I want to thank you Guys again for the receipt ,I haven't had this for years, but going back to the margarine thing,its now known that margarine contain a thing called trans fats which your body can't break down,and its dangerous for your body and actually butter is better for you.,but look up trans fats on the internet and you will be shocked,also a thing called corn syrup,which is a killer .what they diden t know years ago they now know,so I hope this helps.
Margarine is still better, except for the stick ones which uses the trans fats to keep the stick shape. Stick to soft tub margarine and it will always be healthier than Butter.

Thanks, we showed in the video how to get it soft, you have to heat it a little bit. we did so by passing it over the stove burner.
