I've been wanting to do just what you did but have not been able to find any information on the best time to prune and place in a bonsai pot. Your hydrangea had blooms on it. Is this the best time to transplant and begin the bonsai training??

In spring before it start growing is the best time to do repotting. And pruning is best after it blooms in autumn.
I did very drastic and heavy process. I don't recommend doing all this at same time.
It lost a lot of energy and took long time to recover.

Is it good to put clover around the base (this is what I have done)

I would not recommend it if it's a bonsai in a small container. It will complete with the tree and fill the pot with roots.

Alot of the trees died during my winter holiday and this is one of them. It gave out new leafs (still big) but was happy. The pot was to small to hold water for a week.

Plant Hunter TV hi mate shame it died but a good try and maybe worth trying again
I’ve been training mine to grow in a plant pot saucer and no problems Like you I’ve covered the top soil in moss but I do bring mine over the winter , also I’ve been training a small large leaf rhododendron to grow the same way these plants aren’t really desirable for growing this way but hell when it works it works lol for growing rhododendrons though I would stick to azeleas
My next project is a sycamore tree seedling again because the leaf size they don’t really make great bonsai
One tree well worth trying is a foxglove tree. (Paulownia Tomentosa)

Yes Will definitely try again. Mine was outside during the winter in a small plastic greenhouse. I am happy it worked out for you. Yes azalea is more preferred in the bonsai world then rhododendron 😀 would love to see your experiments . You can always find me on Instagram and Facebook page😀😀
