My grandmother made this every Thanksgiving and Christmas lunch. She used heavy cream instead of evaporated milk and I think we doubled the oysters. She’s been gone for 12 years and I make this now. I think it’s better with a little squeeze of lemon over the top. The smell of this cooking makes me think of her kitchen at the holidays.❤
This is my memaw‘s recipe, and she made it for Christmas and Thanksgiving forever, and only a small amount of us liked oysters, but it made more for us that did I was actually getting ready to make this for Thanksgiving for a friend of mine but honestly, I don’t have the money to spend on the oysters. We do it without the milk though. We just pour oyster juice over the top. Sometimes I will add a little bit of turkey gravy not turkey gravy, turkey juice. I might also tweak it with a lot more oysters.

I have never seen this prepared in this way before I happened upon your show on UA-cam. I live in Colorado now, this is a big treat for the Holidays. I even have the casserole that she always used. I love Oyster Stew! In the 1960’s Campbell’s Soup Co used to make a frozen Oyster Soup or Stew. It came in a can like frozen Orange juice. Do you remember that Paula!? You mixed it with water or milk and it was wonderful. At least I thought so, I was a kid of course. My taste has matured by now. Love your video!❤️

The oyster stew is an interesting recipe. Lots of crackers. Not really a fan of oysters but it has been years since the last time I tried them, and that was in turkey stuffing! Maybe it's time to give them another shot!!
We brown the crackers in butter in a frying and then layer them with oysters. We lightly salt & heavily pepper each layer. We use whole milk and Worcestershire sauce to poor over the top. Yummy 😋

Sorry Terry, what a fiasco was made of this recipe. Way too few oysters relative to the crackers used and all liquids should be combined before pouring over the dish, not added as an afterthought! Bottomline I would make this but certainly NOT following her hap-hazard method!

She/we live in coastal Georgia. Oysters are not expensive here.
The only way I like oysters is when they're cut up, breaded and baked or fried.
