In this case, the meringue do not contain any refined sugar. The cream of tartar will help stabilize the egg white 🙂
If you wish to use regular sugar instead of xylitol, you can skip it ❤️

Good morning Chef. In the cream recipe, may I replace gelatin with agar agar. If so, what ratio would you suggest?
Hi Brigitte, you'd need to mix the agar agar with the xylitol at a 1:1 ratio, and cook the cream per the normal recipe instructions.
