Chef Akira!! i've worked under him for a few months at his previous restaurant, appropriately named Maison Akira! one of the funniest memories i have with him was when i was prepping escargot and he strolled over to casually tell me about a story where he picked wild snails and cooked them LOL highly recommend trying his chawanmushi and souffle, they're definitely some his signature dishes. and his beef bourguignon!

Awesome! I wish there was a channel that did a year-long series about seasonal, underappreciated vegetables. Maybe even particular cultivars of vegetables or foraged items like cattails, wild greens, young birch leaves or specific mushrooms. You can make soft drinks with spruce sprouts.
