Faster acceleration would be the shorter diff like 4.10, and higher max speed would be longer one like 3.45 or 3.91, maybe 3.91 would be the best solution because it's in a middle
It is 25%. I don't remebere top speed for each gear, i know it was very hard to reach 200km/h in fifth gear, and i remeber you could skip first and second gear. :)

But its Hard to reach because the car hits the rev limiter or because it isnt powerful enough?
